Corn and Chicken Chowder

Way Way WAY too much thyme! Barely edible. Unless you want thyme soup with chicken, try 1/2 tsp only of thyme and add salt. What a disappointment.

Stir-Fry Pork with Ginger

A good start, or else a quite plain pork dish. Add more green onion to keep it just "pork-y". Else round out the dish with some or all of the following chopped veg: med onion, 2 cloves garlic, 1-2 stalk celery, 1-2 carrots, 1 can straw mushrooms. Sriracha to taste

Pears Panos

Excellent and easy to prepare. I prefer to peel Bosc pears, and I frequently substitute Triple Sec for Cointreau. Top with a dollop of whipped cream or whipped topping and it's a super dessert for guest dinners. A drop of red food coloring added to the syrup (after removing the pears) adds color contrast, but is not necessary. My wife suggests a few drops of chocolate liquor mixed in with the orange liquor while cooking!

Maple Glazed Chicken with Sweet Potatoes

Well, I didn't have any chicken so I used hamburger, and I didn't have any sweet potatoes so I used turnips, and I didn't have maple syrup so I used molasses, but I still feel I am justified in reviewing this recipe....no, no, none of the above is true, it's just that some of the reviews on this site can be so annoying sometimes. Anyways, this recipe actually is lovely! Fast, easy, and it tastes great! 5 stars.

Squash Stuffed with Ricotta Cheese

NOT bland. Add a little more italian seasoning; can also substitute 1 cup plain greek yogurt for half of the ricotta, which adds a little flavor. Main variation: pour the sauce (I used 1 jar Classico florentine/cheese) into the bottom of the dish, then place the squash on top, sprinkle with parmesan, cook, with final 5-10 mins high broil to brown cheese.

Marinated Pork Medallions with a Ginger-Apple Compote

Awesome recipe! I used 1/2 of a 6 lb pork loin--not a true tenderloin--sliced in half, then sliced 1/2" thick and pounded to 1/4" thick. I made about 1/3 the marinade for this amount of meat, and had no problems. For sweetest flavor, follow the recipe of 1/2 hr marinating in the fridge; for more tangy flavor in the meat, marinate on the kitchen countertop for 1 hr, up to 2 hrs. The thin, pounded medallions grill very quickly, so watch for overcooking--don't let them get hard and tough. Serve with a fresh steamed vegetable, crusty bread, and a nice Riesling, and be prepared for oohs and ahhs!
