Spinach Quiche

I didn't have green onion, so I used a small white onion and sauteed it first. I used egg beaters and 2% cottage cheese and cut the cheddar to 1 C. I also added a cup of turkey sausage. Delicious! This is one of the most flavorful, delicious quiches I have ever had!

Awesome, and I made them healthy with half-applesauce and half-oil. I also used whey low and splenda in place of the sugar. They were so moist. Oh, I also added 3/4 t. cinnamon extract.

Baked Zucchini de Provence

Delicious, but it is a littly salty. I'd eliminate the salt completely. Also, I didn't have regular breadcrumbs, so I used a little shake n bake. Maybe that is why it is too salty. Something to keep in mind.

Buttery Corn Bread

I made this recipe the "Weight Watchers" way, and it was moist and delicious. I substituted 1/2 the butter for applesauce, used skim milk and half splenda and half sugar. If I had egg substitute on hand, I would have subbed that for the eggs to make it even healthier. No need to sacrifice taste.

Chocolate Banana Cake

Okay, after reading reviews, here is what I did. I made the recipe exactly as stated here because I noticed that the eggs/oil was the same in this recipe as it is on the box. The only modification is that I added the water that the box said to put in the cake mix. It turned out perfectly moist and soft. I frosted with peanut butter frosting. Yum!
