Cajun Dirty Rice

I loved this -- such comfort food. It smelled a little odd to me while it was cooking and that made me nervous. First bite told me I had nothing to fear. I changed the proportions around on this a bit since I had more ground beef and no sausage. I also made a double batch and froze half for later. When cooking the frozen one, I added a bit of tomato juice to the top , covered it with tin foil and baked for an hour and it came out fabulous. If people are looking for some variety in their cook & freeze repertoire, add this one.

Tuscan Bean 'Goppel'

I ate this two ways -- once as a warm dish like the recipe said and once as a cold salad for lunch. Both ways were great. I'm not a fan of cilantro so I substituted curly leaf parsley.

Cornbread Muffins I

I did a head-to-head bakeoff between these muffins and "Best Ever Corn Muffins" from this site. These were the winner by far. Perfectly sweet, tender get grainy cornbread muffins.

Vanilla Vinaigrette

I loved this. It was a really nice change of pace from the typical vinaigrette. I served it on tossed on field greens with red onion, feta and dried cranberries. I thought I'd try it again with bitter greens, blue cheese and fresh pear slices. Make a very gourmet salad.

Tangy Cranberry Sauce

This didn't quite set up as much as I'd like and I really wanted more horseradish flavor. If I make it again I'll double or triple the horseradish.

Pork Chops with Apples, Sweet Potatoes, and Sauerkraut

Good flavors, but something went terribly awry with my chops and the texture was not good. Might try it again in the oven instead.

Tasty Spinach Treats

Chocolate Bourbon Pecan Pie

I don't really like pecan pie, but this smelled so damned good that I had to try it. Wow! Delicious! The chooclate chips make this fudgy layer that is way good.

Mashed Potato Timbales

I love rosemary so I loved these potatoes. I did, as the other reviewer suggested, make these ahead and froze them. This works just fine, but it's important to note that they won't hold their cute shape while reheating. Still, I really like putting them into my Bento lunches.

Cheesy Pork Chop Casserole

Two stars because there's nothing technically wrong with the recipe. It cooked as promised. No stars for taste and I should have known better. I keep trying these "easy" meals that use soup for flavor and keep not liking the bland, salty results. Know your preferences before trying this recipe.

Chewy Granola Bars

These are my favorite granola bars on all of allrecipes. They're versatile and delicious. The key is the mix of rice cereal in with the oats -- lightens everything up to make it easy to eat.

Watermelon Sangria

Oatmeal Banana Nut Bread

I didn't have any nuts (for once) and I was hoarding my chocolate chips so I subbed in chopped dates. They're a little drier than I usually take my quickbreads, but it has a really nice crunchy crust which is tough to get and tasty.

Cranberry Gelatin Salad I

This is almost identical to my grandmother's recipe. We top it with cream cheese whipped into sour cream. You can use different gelatin flavors if you like. It's much prettier made in molds.
