Caramel Apple Dip

Excellent. After reading other reviews, I used 1c caramel pieces (easier than unwrapping), 1T vanilla, and wound up with the full 1/2c brown sugar, though I added it in 2 steps. It was not unduly sweet, the texture was wonderful, and recovered after refrigerating. Also used 1/3 less fat cream cheese. Yummy recipe.

Blueberry Zucchini Bread

Excellent flavor & texture all around. I used paper mini loaf 'pans' that cost .60 each and baked them on a heavy cookie sheet. They took a bit longer to bake than the recipe, but the toothpick test was easy and accurate. No need to grease the paper pans, they look very nice for gift giving (brown-ish w/a design), and peeled right off the bread without marring it at all.

Spicy Grilled Shrimp

5-23-09 Not that good. Try the grilled shrimp w/tomato sauce and basil next time. Using skewers did make it easier.

Deb's Scallops Florentine

Very good & easy. Added a tiny bit extra half & half to cream so it would be enough for pasta. Also added some nutmeg to the cream mixture. Used some piave cheese mixed with packaged mozzarella blend. Cooked a bag of spinach. Did not precook scallops (or shrimp) and they were fine.

Fancy Chicken Salad

Cream of Cauliflower Soup I

We found this to be wonderful with fresh local autumn cauliflower. Did not puree it much the second time...just used a potato masher in the pot a little bit. We liked the texture. Instead of Swiss, I used a cheddar with garlic, just because it's what I had, very successfully. Kids liked it, too!!

Smushed Apples and Sweet Potatoes

I found this recipe delightful, light but flavorful...and not too overbearing. A good choice trying to get veggies into kids. I topped it with pecans (maybe too many but I love them) but probably wouldn't bother next time.

Spicy Peach-Glazed Pork Chops

Very good. I paired it with a fresh peach salsa, which was terriffic. Would not cook for 8 minutes per side (step 3) unless they're incredibly thick. I did 3 min. with somewhat thick chops and it was just right.

Tortellini Salad I

Very good. Well worth it to purchase a high quality fresh or fresh-frozen tortellini, to avoid that heavy & doughey quality that sometimes makes tortellini salads objectionable.

Spinach and Orzo Salad

Delicious. I used baby arugula instead of spinach just because it was in the refrig and was quite happy with it. My husband squabbled about the color (a result of good quality balsamic), but we all liked the flavor...even three days later!

Strawberry Spinach Salad I

Honey Ginger Carrots

Used a couple of grates of fresh gingerroot instead of powder and a couple of grates of lemon rind in addition to lemon juice and it was delicious. I served it with fresh fish and it was light enough & flavorful (a tough combination to find for carrots). Husband and 7 year old liked it.

Refried Bean Salad

This was delicious. By topping it with a not too spicy salsa, I found it to be an easy way to get extra veggies into my 6 year old. It was equally appreciated by her college age brother and his friends. It was easy and quick, too.

English Trifle

The cake was a shortcake type, which held up well and offered a perfect textural contrast. I used raspberries in place of strawberries because I was lucky enough to happen upon them. Two college athletes and the rest of the group agreed it was excellent. One tip, which was taught to me by my aunt many years ago when cooking vanilla pudding or custard as a filling: Cook it with a piece of lemon rind/zest. It offers a subtle dimension to the filling that is delightful, and was effective here. Also, I was low on sherry and substituted with Amaretto. No complaints!
