Hamburger Hash

Reviewed: Sep. 18, 2007
We loved it! This is a terrific base recipe that is easy to modify to your families personal preferences. I didn't have beef boullion so I used the chicken instead and it still tasted wonderful. I did have to add a bit of salt and pepper to jazz up the taste a bit. For fun I've added Ken's Sweet Videlia Onion salad dressing (instead of an onion) and added a bit of garlic too (I used the kind that comes in a jar). I'd read that others felt it was too thin of a mixture, but I let mine simmer for a while with the lid on and it thickened up beautifully ~ no need to add flour or anything like that. Thanks for listing this yummy recipe ~ it's a huge hit with my family!

Tea Biscuits

Reviewed: Sep. 18, 2007
Finally an easy biscuit recipe!! I have NEVER made a descent biscuit before, so this easy recipe was a wonderful surprise. I only gave it 4 stars because it was extremely salty. Next time I'll cut back quite a bit on the baking powder and salt. My tiny biscuits didn't rise well (maybe I rolled them too thin?). I did have some left over dough so I molded that into 1 chunky biscuit and baked it ~ that one turned out beautifully fluffy!!! Since we love butter, I'll probably add a bit more of that next time too. Terrific recipe and with some very minor tweaking, it is going to be my constant go to recipe for biscuit making.

Sweet Potato Casserole II

Reviewed: Sep. 18, 2007
I loved this recipe ~ so simple and tasty! I didn't have pecans so I had to leave those out. I did cheat and use canned potatoes and my only suggestion is if you go that route that you be careful that your mixture is thick enough ~ mine was a tiny bit too thin. I'll definetly use this recipe again & again.

Chicken Casserole

Reviewed: Sep. 15, 2007
This is a new family favorite for us! I now use it as my base chicken casserole recipe and sometimes tweak it for a little more drama. I recently decided to serve it to my in-laws and so I jazzed it up a bit. I added a can of Rotel tomatoes, 1 can of peas and used a cornflake & butter topping all over. I also added a bit more cheese mixed in and on top. Incredible...Enjoy!
