Artichoke & Spinach Dip Restaurant Style

Have only received compliments when making this dish. I mix all the ingredients together, not layering, and use fresh spinach (sauted & drained). My favorite way of making this dish is taking tortilla wraps, cutting them in small squares, spray a mini muffin tray with olive oil and form the tortilla squares in the muffin tray. Fill with the spinach artichoke dip and bake for approx 5-10 min. I put on broil the last couple of minutes.

Antojitos Minis

I have made these a few times for parties & they always get eaten up. I add or subtract things that I don't have on hand. I mix all the ingredients together except the cheese, & just sprinkle it on top.

Garlic Mashed Potatoes Secret Recipe

Very good, made these for 16 people for Christmas Dinner. I didn't really taste the Romano cheese, maybe it was the brand I bought, but I didn't think it was worth the extra calories.

Roasted Brussels Sprouts

Made these for Christmas Dinner. I put them under the turkey on the bottom rack in the oven, so I had to check on them a lot, but they turned out great & I had everyone ask for the recipe

Salmon and Potato Pie

Thought it was very good, but could of used some kind of vegetable in it. I made it with real salmon (4 fillets- baked in the oven) and used dill and lemon instead of thyme.

Pizza Pinwheels

Made a few times already, once to bring to a party. Got rave reviews from all and we're gone within minutes. I used pizza dough instead, and found that if you finely chop the meat and add some green peppers & mushrooms. Used leftover pizza sauce for dipping.

Simple Spinach Lasagna

Very tasty! I used a package of fresh spinach instead of frozen, used a bit more tomato sauce and omitted the water. I didn't mix any mozzarella with the cottage cheese, just sprinkled a little on top. I also used whole wheat lasagna noodles- cooked first. It was a nice change- alot lighter tasting than normal lasagna.
