Saltine Toffee Cookies

I gave these 5 stars because they are so quick and simple to make, inexpensive, and everyone loves them! I whip out several batches of these for co-workers, teachers, bus driver, etc. Some tips: always line your jelly roll pan with foil AND spray with non-stick spray. You can use graham crackers or saltines; my family prefers graham crackers. Be sure to watch your time closely so they don't burn. After you put on the chocolate chips, return the pan to the oven for about one minute then it's easy to spread the melted chips with a spatula. I don't usually add the nuts as they are pretty expensive and I am always making multiple batches. I usually just sprinkle them with red and green sugar if I have it. I always let these cool in the garage-- freezer or fridge is not necessary unless you're in a hurry. Then before they are completely cool, use your pizza cutter to cut them. These makes a for a nice presentation (as they are in squares) and easy removal from the tray.

Slow Cooker Chicken Stroganoff

My family LOVES this recipe. What I've learned from making this several times is that if you will be home in 5-6 hours, follow the recipe exactly. If you are going to be gone longer, then it is best to add the soup in the morning unless you use frozen chicken breasts which will obviously take longer to cook. I had a long day at work and left the thawed chicken breasts on low for 7 hours and they began to get brown. This did not affect the taste of the recipe, however. I have also used a packet of ranch dressing which I had on hand, rather than the Italian. This is simple and delicious every time!

Italian Meatloaf in Zucchini Boats

This recipe was yummy and a great way to use up zucchini! I used 4 medium zucchini and had plenty of filling. Following other reviewer's advice, I cooked the zucchini for 15 minutes before stuffing then baking as stated in the recipe. However, I mixed the shredded mozzarella in with the meat mixture BEFORE baking. They came out perfect. I served these with a side of spaghetti.

Crabmeat Canapes

I followed the advice of the other reviewers and used garlic powder in place of garlic salt. I also lightly toasted the muffins first. I was unable to find Kraft Old English cheese so I used Wispride sharp cheddar in the dairy section of the grocery store. These were very good. My kids loved them too, I called them "Krabby Patties"!

Brandy Slushes

I got this recipe from my mother-in-law. I made it for my bunco group and it was a big hit. However, I used peach brandy and substituted frozen peach daquiri mix for one of the concentrates. I also provide ginger ale, rather than lemon-lime soda. Be sure to make this first thing in the morning and stir every hour or two to keep the alcohol mixed as well as to prevent big chunks from forming (trust me on this, I learned the hard way!).

Easy Red Beans and Rice

I am giving this 5 stars even though I tweaked it a bit. I used 1/2 bag of dried black beans (soaked cooked of course) because my family does not like red beans. I used a can of crushed tomatoes because I didn't want to do any chopping. At a friend's suggestion, I used a pack of Carolina Saffron yellow rice mix with seasonings found in the grocery store rice aisle. One packet was barely enough for my family of 4 so you may need to use 2 (it cost 75 cents!). My entire family LOVED this meal. We are from PA and don't care if it's authentic or not. It was easy and delicious!

Basic Ham and Bean Soup

This ham and bean soup was delicious! I followed some other reviewers' suggestions and bought a bag of mixed dried beans. I used the quick soak method and it worked fine. I put the leftover bone from our Christmas spiral ham along with all the other ingredients in the crock pot for 8 hours on low. Along with a loaf of Italian bread we had a hearty meal for a cold winter night!

German Chocolate Bars

I LOVE these bars! Yup, they are very rich and very chocolatey (is that a word?) which is why we like them. I sprinkle some coconut flakes on top when adding the chocolate chips and frosting because I like a little more coconut. I never refrigerate before cutting; I simply let cool completely like I would brownies.

Tangy BBQ Ribs

These ribs were yummy! This was my first attempt at making ribs and I wanted something easy. I made them in the crockpot because it's so hot outside I didn't want to use the oven, and I didn't know what would happen if I attempted to make them on the grill! LOL If you use the crockpot, be sure to cook on low for at least 7 hours.

Cosmopolitan

LOVE this drink! I also made a few changes, similar to the other reviewers. I use Rose's lime juice (purchase at the grocery store to save money). I substituted triple sec for the Cointreau because of cost. I also used citrus vodka because it was what I had on hand. Delicious!

Slow Cooker Pulled Pork

I know this doesn't need anymore reviews but this is delicious! The only "change" I made was after I shredded the pork I put the entire crock (mine is removable) in the oven at 400 degrees for about 30 minutes or so (just keep an eye on it). This helped the pork get that oven roasted flavor and allowed some of the liquid to evaporate or soak in or something.

Slow Cooker Chicken Taco Soup

Delicious! I followed this recipe almost exactly as far as ingredients go, but added my own twist. Based on other reviews, I did leave out the beer. After I dumped in the ingredients, I put some water in each can to rinse out the contents and added that to the soup because it did not seem like enough liquid. After 7 hours in the crockpot on low, I added a (12 oz??) bag of shredded cheddar. I also mixed some cooled broth with flour and added that to the soup to thicken it slightly. We served it with hearty bread, tortilla chips, and a dollop of sour cream. My family loved it!

Monkey Bread I

My main reason for rating this is to let you know this can be made the night before. I used 3 small (7 oz?) tubes of biscuits, followed the recipe for the cinnamon & sugar coating, and left them in the bundt pan overnight in the fridge covered with plastic wrap. In the morning, I made the caramel mixture (with a tsp. of vanilla as others suggested) and baked. They came out great! This step saved me a lot of time in the morning as I needed them for our early morning bus stop party.

Chocolate Chip Cookie Ice Cream Cake

Although this recipe doesn't need any more comments, I'll explain how I doubled it. I used a 9x13" pan. I made an oreo crust for the bottom using 2 sleeves of crushed Oreos. Then added a half gallon of raspberry swirl. Then a layer of strawberry sauce and 1 sleeve crushed oreos. Another layer of strawberry swirl and covered that with whipped cream. Delicious!

Confetti Chowder

My family liked this recipe. Although my 11 year old said there were too many veggies, LOL! I followed the recipe very closely. I had a bag of mixed veggies in the freezer (same ones as in the recipe) which I used instead of fresh. I added some Italian seasoning and minced garlic based on other reviews. I did not use peas or pimentos because we don't like them. This is a great base recipe that you can use exactly as is or play around with to suit your family's taste!
