Sausage and Egg Casserole

This is a delicious and easy breakfast casserole. I followed the recipe as is and my family loved it! However, I too found it was not necessary to refrigerate overnight (as another reviewer stated). My 8 year old requested this for Christmas breakfast and my mother-in-law wanted the recipe (so you know it HAS to be good LOL).

The South Mission Mango

This is a definitely a nice drink for sitting out on the patio. I agree with some of the reviews in that it is a very thick, frothy drink. I used frozen mango because I couldn't find canned and then I cut back on the ice.

Tangy BBQ Ribs

These ribs were yummy! This was my first attempt at making ribs and I wanted something easy. I made them in the crockpot because it's so hot outside I didn't want to use the oven, and I didn't know what would happen if I attempted to make them on the grill! LOL If you use the crockpot, be sure to cook on low for at least 7 hours.

Raspberry Almond Muffins

These are very good breakfast muffins. After reading the other reviews I added a few spoonfuls of sugar to the fresh berries before I folded them in. They are not super sweet, but my whole family liked them this way. I doubled the recipe because I had raspberries I needed to use up. I substituted vanilla extract for the almond extract and omitted the almonds only because I didn't have either and I wanted the muffins NOW! I used 24 regular size muffin tins sprayed, and still had enough batter left over (after filling the tins 3/4 full)to make a tin of 12 mini muffins to which I added chocolate chips for my youngest. This, of course, was yummy too! I will definitely make this again after I buy almonds and extract!

LOVE this drink! I also made a few changes, similar to the other reviewers. I use Rose's lime juice (purchase at the grocery store to save money). I substituted triple sec for the Cointreau because of cost. I also used citrus vodka because it was what I had on hand. Delicious!

This recipe was okay. It's almost like a cosmopolitan with some lemonade added in. I would just as soon drink a cosmo, but that's my preference.

Crunchy Ice Cream Dessert

I also have a similar recipe made with rice krispies. I used sliced almonds and when serving, drizzled with caramel sauce. Yum!

Chicken Enchilada Dip

I made this dip when it was my turn to host Bunco and I got multiple requests for the recipe. I did what several others had done--use half mayo/half sour cream and substituted Rotel for the jalapeno and chile peppers. I serve this with pretzel crisps found in the deli section of my local supermarket. YUM!
