Shepherd's Pie VI

The kids loved this recipe and wanted to give it 12 stars. I followed other reviewer's advice and added some Worcestershire to the ground beef while it was cooking. For vegetables, I used a bag of frozen mixed vegetables and mixed them in with the meat after it was cooked. I also used 1 cup water and 1 envelope brown gravy mix. I used Bob Evans refrigerator mashed potatoes for the top.

Coconut Chicken

Delicious! My boys love this recipe. I followed the recipe exactly except for the dipping sauce (step 5). I hated to throw away the leftover marinade so I thoroughly cooked that as my dipping sauce and used the leftover coconut milk (plus water as needed) to boil rice so I had coconut rice to serve as a side dish.

Grilled Asian Chicken

Yum! I followed the recipe exactly regarding the ingredients. However, I marinated all day and then baked it in the marinade. I served this with Chinese Chicken Fried Rice II from this site and steamed broccoli. DH mixed everything together in a bowl.

London Broil I

Followed the recipe exactly with the exception of adding a splash of lemon juice per other reviewers' suggestions. I marinated a thick piece of London Broil 24 hours then grilled it. It was delicious!

I followed the recipe exactly and they are delicious. I discovered that my 3 cookie sheets made a difference as to whether they were flat or fluffy. Some sheets came out flat - go figure?!

Peanut Butter Cup Cookies

Even though this doesn't need any more 5 star reviews, I thought I would add my helpful hints from many years of baking these. After mixing the dough, I divide the dough into 4. I have 4 mini muffin tins and I roll the dough into balls with my hands to fill up all the muffin tins. It didn't make any sense to me to have a partially filled muffin tin in the oven and making 40 cookies seemed to make them too big.

Best Tuna Casserole

I halved this recipe and it was enough for our family of 4. I followed the other reviewers advice and added a soup can of milk and a dollop of sour cream and a dollop of mayonnaise. I chopped up cooked broccoli, carrots, and cauliflower instead of the peas simply because that is our family's preference. Everyone enjoyed this recipe.

Grilled Chicken Thighs Tandoori

I would give this 10 stars but my family had mixed feelings. I used balsamic vinegar because that's what I had on hand. I don't feel it need any added salt. Definitely take the lid off near the end to let the sauce reduce and thicken. I served this over plain rice and scooped some sauce on the rice. Yum!

Mid-Eastern Chicken Thighs

I would give this 10 stars but my family gave it mixed reviews. I used Balsamic vinegar because I didn't have red wine vinegar. I do not think it needs any salt. Definitely take the lid off the pan during the last few minutes to let the sauce thicken. I served this with plain rice and scooped some sauce on the rice. Yum.

Salsa Chicken

Simple, easy, yummy and I had all the ingredients on hand. Thank goodness because I hadn't planned ahead! The only change/addition I made was to sprinkle some crushed tortilla chips on top as suggested by another reviewer. If I had not been short on time, I would have rolled the chicken in the chips. I served this with rice and corn. 1/2 the family ate it as is, the other half shredded it and rolled it in a tortilla along with rice, corn, salsa, and sour cream. Delicious!

Parmesan Crusted Chicken

I followed the recipe exactly.My family liked it but they didn't rave over it, "It's chicken" they said. It was tender and juicy. I made it in a Pyrex dish. Next time I will try baking it on my stone as it was not crispy on the bottom.

Chicken Stir-Fry

I'd give this 6 stars if I could. My family loved this! I made a few minor changes based on what was in my house (because I don't plan ahead). I used fresh stir fry veggies, vegetable oil, and powdered ginger. Because of my family's preferences, I halved the soy sauce and replaced the remaining 1/3 cup with chicken broth for the marinade. After the ingredients were cooked, I whisked and heated the leftover marinade to thicken and used it for sauce - yum!

Easy Lasagna II

This was a good basic lasagna recipe. I follwed the recipe almost exactly. subbed ricotta for cottage cheese and used 2 24 oz. jars of sauce rinsed out with water. It could have actually used a little more sauce imo as the noodles soak up the sauce.

Slow Cooker Reuben Dip

Everyone enjoyed this recipe. I served it with rye Triscuits and it was delicious. According to other reviewers, a 1/2 lb corned beef = 2 cups. I purchased it from the deli counter, chipped.

Garlic Chicken

My hubby gave this 5 stars, which is high praise from him! My kids and I gave it 4+. I followed the recipe exactly using grated Parmesan cheese from the refrigerator section of the grocery store as opposed to the powdered stuff. I only wish I had made more so we could eat the leftovers!

Dad's Leftover Turkey Pot Pie

This was yummy! It will be added to the regular rotation. I halved the recipe for my small family. I changed up the veggies because I had leftovers to use up. I used potatoes, carrots, corn, and green beans. I would like a little more gravy, however, so I will add more chicken broth next time. Definitely try to leave time to let it sit at least 10 minutes before serving so the gravy thickens up; I learned the hard way. It still tasted great, but it was definitely soupy without the resting time.

Delicious Ham and Potato Soup

I followed Barbi's suggestions to make this soup in the slow cooker. I was looking for a way to use up my leftover Easter ham and was tired of my usual (although delicious) Basic Ham and Bean Soup from this site. I used evaporated skim milk to make the roux after allowing the other ingredients to cook all day. I did add a little bit of marbled jack cheese to the roux and a bag of frozen corn to make it more of a cheesy ham and corn chowder. Other than those additions, I followed the recipe and it was yummy!

Shrimp Scampi Bake

Yummy! This shrimp was fab-u-lous! I used Herlocher's dipping mustard because that's what I had. I also followed Sydney's advice and added some bread crumbs and grated Parmesan/Romano at the end and broiled the shrimp. I used the full amount of butter and it was just right to serve over spaghetti. But don't make the same mistake I did, to make your life easier, be sure your shrimp is peeled!

Beef Stroganoff III

Yummy! My whole family enjoyed it! I used leftover roast beef and left out the wine because I didn't have any. I also followed BEEZLY's suggestion and subbed in some cream cheese for the sour cream. I put the beef broth and flour in a jar and shook it so I wouldn't have lumps. I also used fresh mushrooms because we like them and they were on sale.
