Chicken Stir-Fry

I'd give this 6 stars if I could. My family loved this! I made a few minor changes based on what was in my house (because I don't plan ahead). I used fresh stir fry veggies, vegetable oil, and powdered ginger. Because of my family's preferences, I halved the soy sauce and replaced the remaining 1/3 cup with chicken broth for the marinade. After the ingredients were cooked, I whisked and heated the leftover marinade to thicken and used it for sauce - yum!

Easy Lasagna II

This was a good basic lasagna recipe. I follwed the recipe almost exactly. subbed ricotta for cottage cheese and used 2 24 oz. jars of sauce rinsed out with water. It could have actually used a little more sauce imo as the noodles soak up the sauce.

Slow Cooker Reuben Dip

Everyone enjoyed this recipe. I served it with rye Triscuits and it was delicious. According to other reviewers, a 1/2 lb corned beef = 2 cups. I purchased it from the deli counter, chipped.

Garlic Chicken

My hubby gave this 5 stars, which is high praise from him! My kids and I gave it 4+. I followed the recipe exactly using grated Parmesan cheese from the refrigerator section of the grocery store as opposed to the powdered stuff. I only wish I had made more so we could eat the leftovers!

Dad's Leftover Turkey Pot Pie

This was yummy! It will be added to the regular rotation. I halved the recipe for my small family. I changed up the veggies because I had leftovers to use up. I used potatoes, carrots, corn, and green beans. I would like a little more gravy, however, so I will add more chicken broth next time. On another note, I don't understand how the most helpful critical review could possibly be helpful as the first line states, "I have not made this recipe."

Delicious Ham and Potato Soup

I followed Barbi's suggestions to make this soup in the slow cooker. I was looking for a way to use up my leftover Easter ham and was tired of my usual (although delicious) Basic Ham and Bean Soup from this site. I used evaporated skim milk to make the roux after allowing the other ingredients to cook all day. I did add a little bit of marbled jack cheese to the roux and a bag of frozen corn to make it more of a cheesy ham and corn chowder. Other than those additions, I followed the recipe and it was yummy!

Shrimp Scampi Bake

Yummy! This shrimp was fab-u-lous! I used Herlocher's dipping mustard because that's what I had. I also followed Sydney's advice and added some bread crumbs and grated Parmesan/Romano at the end and broiled the shrimp. I used the full amount of butter and it was just right to serve over spaghetti. But don't make the same mistake I did, to make your life easier, be sure your shrimp is peeled!

Beef Stroganoff III

Yummy! My whole family enjoyed it! I used leftover roast beef and left out the wine because I didn't have any. I also followed BEEZLY's suggestion and subbed in some cream cheese for the sour cream. I put the beef broth and flour in a jar and shook it so I wouldn't have lumps. I also used fresh mushrooms because we like them and they were on sale.

Slow Cooker Casserole

My family thought this was okay. I halved the recipe and followed the directions with 2 very minor changes. I used 2 packs of noodles but only one packet of seasoning because I was worried about it being too salty. I used fresh veggies (broccoli, cauliflower, carrots) because that's what I had. They turned to total mush after 6 hours on low. I think next time I will add the veggies when I get home from work and use egg noodles as another reviewer suggested. I would definitely suggest adding a can of water at the beginning, this dish was extremely thick and I needed to add water when I added the noodles. You don't need to turn crock pot to high when adding the Ramen noodles, they cooked very quickly on medium.

Bruschetta Chicken Bake

My family liked this meal. I did substitute a T of olive oil and a T of balsamic vinegar for some of the water. I also added some fresh basil. Other than that I followed the recipe. An easy and tasty meal.

Gary's Turkey Burritos

Everyone in my family loved this recipe! I followed the recipe almost exactly but I assembled it differently because I was short on time. I used one can of Rotel hot tomato sauce and one jar of salsa because it was in my fridge needing to be used and I wasn't sure how my kids would react to the heat of the hot tomato sauce. While the turkey and onion were browning, I divided the can of refried beans among 8 8-inch burritos to help them stick when I rolled them. I added the corn to the turkey & onion mixture and spooned it on the burritos. I then heated up the tomato sauce and salsa and poured it over top of the burritos. I baked it at 350 for about 7 minutes. I'm not sure I would do it this way again as the burritos were soft, not crispy but I did not want to take the time for the tomato sauce mixture to thicken because my kids were hungry NOW!

Reuben Casserole

The whole family liked this! I scaled the serving size to 4 and made in a 9x 13 baking dish. I also made this upside-down, putting the corn beef on the bottom. I used the full can of kraut and an 8 oz bottle of low fat thousand island plus 1/2 lb of sliced Swiss cheese. I placed the slices (not cubes) of rye bread on top and sprayed with butter spray. I followed the cooking directions and the bread got nice and toasty.

To Die For Blueberry Muffins

The title of this recipe is accurate. I have tried several blueberry muffin recipes but could not find one I liked. I followed this recipe exactly with the exception of brown sugar instead of white for the topping. I made this twice now, once with raspberries, and it was equally as good. I also added extra blueberries - a whole pint. I used a regular size muffin tin and sprayed generously with cooking spray.

Slow Cooker Pulled Pork

I know this doesn't need anymore reviews but this is delicious! The only "change" I made was after I shredded the pork I put the entire crock (mine is removable) in the oven at 400 degrees for about 30 minutes or so (just keep an eye on it). This helped the pork get that oven roasted flavor and allowed some of the liquid to evaporate or soak in or something.

Antipasto Pasta Salad

This recipe was yummy. It does make a ton! I made very few changes based on my own personal taste. I used mozzarella cheese. I have no idea what pepperoni sausage is, so I just used pepperoni and I did not add olives because I don't like them. I followed the recipe for the dressing using other reviewers' suggestions of mixing everything the night before with the exception of the Balsamic vinegar, which I added shortly before serving.

Easy Slow Cooker French Dip

My 8 year old wants to give this 27 stars! Seriously, this was easy and yummy. I followed the recipe exactly with the exception that I added a Tbsp. each of garlic and Worcestershire sauce as per other reviewers. I also added provolone cheese to my sandwiches and melted it. I used a chuck roast because it is what I had in the freezer. It was very fatty. I think next time I will choose a leaner cut of meat.

Chicken Noodle Stir-Fry

I followed some of the other reviewers advice and doubled the Ramen noodles (we like noodles) and threw out the seasoning packets. Instead I used a can of chicken broth thickened with flour. I used the veggies I had on hand - broccoli, cauliflower, carrots, and a bit of leftover yellow bell pepper.
