Vodka Soup with Mushrooms

Used Mario Batalli's sauce and added just a little salt and parm cheese. This is quite impressive for being so quick and easy. Used my panini press with some sourdough and havarti to dip in the soup and it made for a great weeknight meal for a cold evening.

Shrimp Lemon Pepper Linguini

I thought this dish was great but 100% necessary to double the liquids - the reason I gave it 4 stars. This is a light tasting dish (even with all that butter) and was incredibly easy. Made it for mothers day and was well received by all. I did have a side of parm cheese for anyone who wanted it. Will difinitely make again but always with that extra sauce - can't imagine the recipe without it since my end result wasn't liquidy.

Spicy Slow Cooker Black Bean Soup

People really need to rate based on the recipe as written and not on their changes. As written, this is the pitts. As others have described, it's beans floating in gray water. Mashing the beans is without a doubt crucial - I just took a potato masher and began squashing them in the crock pot. Also crucial is doing something to add flavor to this boring bland blah dish. I sauteed up some onions and turkey bacon since that's what I had on hand. Then I ended up topping it with a little cilantro, sour cream, salsa and guacamole and looked at the final outcome of my dish and wondered to myself why I bothered with this and didn't just make fajitas with canned black beans. Hate to give bad reviews :( sorry.

Figs and Toasted Almonds Brie

I made this for a wine tasting party I hosted and got great compliments. It was quick and easy. Used canned figs. I almost dumped the fig/brown sugar mixture because I got a big waft of throwup smell in the first 5 minutes of heating it on the stove. So glad I didn't - the weird smell went away and the end result was so much more complex, savory and elegant than the brie with raspberry combination. I gave the recipe out to the girls and plan to make again!

Mouth-Watering Stuffed Mushrooms

Maybe my mushrooms were small but I felt like an entire package of cream cheese was a lot for my 12 mushrooms. Used 3/4 of the package along and followed the recipe for the rest of the ingredients. These were good, I'll make them again. Easy too.

Kickin' London Broil with Bleu Cheese Butter

London broil just can't be cooked in any quick way. We felt like we were eating shoe leather. What's up with all of these great ratings - maybe I'm just lucky that I've been to really good steak restaurants.

Honey Baked Chicken II

Very good. Was told to put this on the permanent rotation! Used skinless, boneless chicken breasts, way less butter (actually used benecol), upped the curry. shook in a little onion and garlic powder and a dash of cayenne. Mixed the honey and the rest of the mixture right in my casserole dish. Didn't have too much time so put the oven up to 400 degrees - 15 minutes covered with foil and then 15 minutes uncovered. My basting was just flipping the chicken after the first 15 minutes. Served it with basmati rice and a mixture of veggies. Super easy and super good.

Oven Pot Roast

Do not think you are going to get the super tender pot roast you get from using a crock pot. I made this for a birthday dinner and wasn't expecting that everyone would need knives. Dumped the leftovers in the crockpot the next morning on low - hours later the meat was way more tender and the sauce had simmered down to the nice gravy I had hoped for the day before. I'll repeat the mixture but next time I'll skip the oven and go for the crockpot instead.

Indian Chicken Curry II

On phase 1 of South Beach and have been trying to keep dinner interesting so I don't feel deprived. I love Indian food but I've always heard about how incredibly fatening it is so haven't had it in way too long. The ingredients in this dish work on South Beach and I believe would work with many diets. Used less oil than called for and used lite no sugar coconut milk. Didn't have lemon or bay leaf but didn't feel like a thing was missing. Did add a dash of nutmeg - not sure if that added anything. Made it pretty spicy like we like it. Was incredibly easy and will definitely be doing again.

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

Other than doubling the sauce, I stuck to the recipe. It was pretty boring. To eat it I had to keep squirting it with my no cal. buttery spray and sprinkling it with parm. cheese. Now I have a huge batch left over with no takers.

Garlic Red Potatoes

good. not great. read the reviews and nuked them in a bowl w/ a tiny bit of water prior to putting them in the oven. then i upped the temp to 400 and ended up broiling them when i felt like they weren't browning and getting crispy.

Asparagus Cashew Rice Pilaf

I don't know how to cook but am trying to learn and was pleasantly surprised at how this dish turned out. Used chicken stock, whole wheat spaghetti and whole cashews. When I was buying the cashews I worried that the salted ones would make the dish too salty but couldn't find unsalted. Worked out perfectly though - even with double the amount. Great dish and I feel like I could impress company with it. (Especially friends who are used to me nuking dinner.)
