Lover's Loaf

My husband and I don't usually like meatloaf. I saw this recipe and thought it might be worth a try. I wasn't disappointed. My husband and I loved it and my children liked it as well. This recipe was a winner in our house. I also like that it makes a second loaf that you can have ready to go for another time.

Big Soft Ginger Cookies

My search for the perfect ginger cookie has ended! I skipped rolling these cookies into balls and used my cookie scoop instead and simply sprinkled the sugar on top. These cookies were excellent!

Black Bean Soup I

The broth for this soup was wonderful and so fragrant. I also prefer to eliminate the vinegar and added a clove of minced garlic to the sautee. I also added rice and corn to the mix. It was excellent.

All Day Apple Butter

I liked the balance in flavor for this recipe. I made alterations. 1. I first simply quartered and cooked the apples in water. 2. I strained the apple juice through cheese cloth. I then used the juice to make Candy Apple Jelly a recipe submitted by All Recipes' Betsy Porter. The remaining pulp I ran through my fruit strainer so it was smooth. I finished the recipe as directed here and obviously reduced the cooking time. I was happy with the results and have much product as a result of my labor. I have 11 jars of Apple Butter and 8 Jars of Candy Apple Jelly perfectly set and sealed ready to be given away as gifts. Not bad for only 5 1/2 lbs. of apples.

Candy Apple Jelly

The jelly in the jars looks absolutely amazing. I made my apple juice from fresh apples and the resulting jelly is fantastic. So I can absolutely brag on this one. I made no alterations on this recipe. I did however use my remaining apple pulp to make All Day Apple Butter submitted by Terri. I yielded 8 half pint jars and also 11 half pints of Apple Butter for only 5 1/2 lbs. of apples.

Downeast Maine Pumpkin Bread

EXCELLENT! This recipe is perfect, it needs no alterations. I have bigger loaf pans so my batch made 2 beautiful loaves. I needed only to bake them a little longer.

Turkey Brine

Turkey is a must at Thanksgiving- but this brine takes turkey to a whole new level. A great solution to flavoring the whole bird and not just the skin. Beyond that, you can still season and/or stuff the bird in your favorite way. The brine only serves to bring out natural flavors and keeps the meat very moist. Will do this again and again.

Herman Applesauce Doughnuts

The texture of this doughnut is much crispier than the cake doughnuts I have made before. The sourdough and applesauce flavors are subtle. I was hoping for a richer flavor and was a little disappointed. Perhaps if my starter was aged longer this would change at least one aspect of this. I used homemade, slightly chunky applesauce, so I'm not sure how much more I could adjust that flavor. Because the sourdough flavor is unique to my current recipes I will likely do this again, but will try to adjust the flavors to suit my preference.

Monkey Bread II

When I was lloking for a "Monkey Bread" recipe, I was dismayed to discover that most use a premade bread product of some kind. This one is from scratch, but offers the convenience of the bread machine. The result was fantastic. My house smelled wonderful too. I have stored this recipe away to use again and again.

Golden Crescent Rolls

Just what I was looking for! I did do this recipe in my bread maker and it turns out excellently. I made little hot dog piggies in the blanket for a fun treat for my kids with half of the dough and made cinnamon rolls with the other half. For the cinnamon rolls I spread butter all over my dough rolled out as directed in this recipe except I shaped into a rectangle. I mixed 1/3 cup brown sugar and 1 tablespoon of cinnamon and sprinkled this all over the dough, rolled it up, cut into 1 inch slices, placed them in an 8x8 pan and refrigerated overnight. Pulled them out only as long as it took my oven to preheat and baked at 400 degrees for 15 minutes and iced with a combination of milk and confectioners sugar. I liked that one half the recipe is enough for meal with my family and I can have a simple solution for breakfast as well.

French Breakfast Puffs

Make no mistake, this is really just a muffin. There is a mistake with the sugar, yes you should cream it with the shortening and skip sifting it with the flour. It was a nice breakfast muffin. I had homemade apple butter and jelly to pair it with, that was a perfect combination. These muffins remind me of Snickerdoodles. They make a nice treat in the morning.

Cinnamon Belgian Waffles

Excellent! I have made many different homemade waffles and this recipe is the best by far. I followed the recipe exactly, no changes. I served with apple butter. Apples or any fruit would be perfect on these waffles.

Stir-Fried Vegetables

Nice recipe. I too used broth instead of water. I also used a bag of frozen stir fry vegetables in stead of fresh, as it was what I had on hand. It worked well and was what I was looking for.

North Carolina-Style Pulled Pork

Excellent! I did the rub, scoring the meat a bit to really get the seasoning in, then let it set. I wanted to have this done when we got home and since I didn't want to leave the grill unattended I made some adjustments. I grilled it for an hour, searing the meat and putting a nice char on it, then I put it in my crockpot. It was perfectly done when I wanted it and had that wonderful smoky flavor- the natural way! I adjusted the sauce to my taste, using less vinegar, salt and peppers adding some cajun seasoning and molasses. The whole result was INCREDIBLE!

Garlic Spread

Surprisingly good. Often the simplest ingredients will yield great results -and this did! I didn't change anything, but did allow it to set at room temp to soften a little before serving. We used this as a spread for crackers, but it would make an excellent bagel spread.

Zucchini Cake I

Moist & Delicious! I have made this recipe several times (zucchini season) and I have excellent results every time. I like to use my bundt pan, so I bake it at 350 for 80 minutes. My six year old begs for this recipe on a regular basis.
