Stephen's Chocolate Chip Cookies

Well I need another chocolate chip cookie recipe like I need a hole in my head! But this sounded interesting so I gave it a try. I made it exactly as written (it was such a sweet tribute to the author's Dad - I wanted to make it just the way she created it for him) The texture was absolutely perfect! I thought it would be too many nuts but the ratio is still the same so they were great. Also I don't even like white chocolate chips but I enjoyed them in combo with everything else. Thanks for sharing this :-)

The Way to a Man's Heart

Awesome!! My family (and guests) unanimously voted this on the "keeper" list-which doesn't happen very often! I substituted shallots for onions, and added some large chopped shrimp. I made in advance and then heated for maybe 20 mins covered in the oven, then uncovered for the last 5 mins. It was very rich, even with low fat milk. Served with just a green salad and hot sourdough bread-really nice Sunday evening meal on a cold night. :-)

Asian Coconut Rice

This was a really good recipe, but not worth all the fat grams! I used low-fat coconut milk, and topped it off with toasted coconut and toasted macadamia nuts. Everyone liked it, even the coconut-haters!

Double-Delight Peanut Butter Cookies

I thought these were great. The creamy middle was a nice contrast to the crunchy cookie, and it was the cinnamon/peanut mixture on the outside that puts them over the top! However, they were messy, and more work than "from scratch" cookies. Also, I only got about 19 cookies so I will have to measure the dough better next time. Also watch time; they continue to cook a little after taking them out. Thanks for million dollar winner :-)

Parmesan Chicken

This was moist, full of flavor and super easy. I followed advice and added the melted butter into bread crumbs/parmesan. I baked in the oven at 350 for 30 mins or so, then put a tablespoon of marinara sauce and some mozzarella on top of each and broiled until cheese melted. Served with spaghetti and salad and everyone was happy!

Tropical Salad with Pineapple Vinaigrette

Sirloin Tips and Mushrooms

Wow I used cheap chuck steak my husband bought and it was still amazing!! I used fresh mushrooms (a must) and substituted half the olive oil with butter at the beginning. Also instead of red wine I used grape juice with red wine vinegar. Thank you for this recipe - it is an instant classic at our home.

Overnight Blueberry French Toast

I made this for father's day breakfast and it was a hit! I used 1 and 1/2 pkgs light cream cheese mixed with a little powdered sugar and milk, half white bread and half whole grain (no culinary purpose - it's just what I had on hand), 11 eggs, and a few extra blueberries. I followed other reviewers and doubled the syrup. It was very decadent, especially compared with the boring diet food I have been eating the last two months! It is a recipe I will only use for very rare occasions because it is so rich, however, it was beautiful and delicious!

Citrus Broiled Alaska Salmon

I thought this was just "okay". I made as per the recipe except I put the pepper directly on the fish (couldn't bring myself to put pepper on an orange). It was REALLY easy, and definitely okay to make again, but it was not memorable.

Fresh Herbed Halibut

This only took a couple minutes to put together, and it fit well into my diet. I used less than a tablespoon of oil, and it cooked under the broiler (several inches away) in about ten minutes. Next time I will take a little more time and add fresh garlic and dill, but this was easy!

Cake Mix Cookies VIII

I somehow got a cake mix and found this recipe trying to figure how to use it. This is a great recipe for quick easy cookies. Does not have the same greatness as made-from-scratch, but is valuable when in a hurry. I used cherry cake mix with chocolate chips - flavors blended well.

Banana Oatmeal Cookie

I made these twice, following recipe except one time I substituted butter for the shortening. Both times they turned out okay, but not fantastic. They were a little dry. I liked the idea of bananas and oatmeal in cookies (adds some nutrients although it certainly doesn't make them health food!)

Banana Sour Cream Bread

Wow! I've been making various recipes of banana bread forever, but this one is a cut above the rest! I like the fact that it uses butter rather than shortening. I put a few mini chocolate chips in one loaf for fun. This caused some family drama - some members trying to keep others from eating the bananas before they went ripe because they wanted me to make this again!

Asparagus Cashew Rice Pilaf

This one sounded a little weird - spagetti and rice together? But I was looking for a way to use up extra asparagus and all ingredients were on hand. Wow! The whole family LOVED it! I added extra cashews and didn't have jasmine rice so I used regular but otherwise made it exact.

Anniversary Chicken I

I am always looking for good recipes that will feed the masses (big extended family) and this recipe is great for any size group. I thought the flavors blended together terrific. I used regular bacon, and pounded the chicken a little before browning. Definitely a keeper - thanks for the great recipe!
