Mom's 'Sweet 'n' Sours' Pork Ribs

Followed the recipe (except I used Splenda sugar substitute and reduced sodium soy sauce per dietary restrictions) and family said it was just OK. Kids said they liked the sauce just fine but prefer ribs to be more tender, either cooked low and slow in oven when I do BBQ ribs or in crock pot. Will make again, but use another cooking method for the ribs.

Unbelievable Chicken

This was amazing! I followed exactly as written and wouldn't change a thing. Next time we're going to do chicken and veggie kabobs. Update: made a second and third time - my kids love this grilled chicken! This time around I used splenda brown sugar substitute to make a bit healthier and rice wine vinegar as that was all I had on hand and we could not tell any difference. Also made a little extra marinade for veggies, grilled in foil pack along side the chicken while camping and served over rice. Delicious!

Thai Chicken Broccoli Slaw

Used this recipe to try to replicate wraps we got from a food cart at a festival a while back. Not as good as the food cart's wraps, but close enough to satisfy our craving!

Mexican Pizza I

We loved these - nice change from tacos or burritos. Did have to use flour tortillas for my picky eaters who won't eat corn ones. Skipped the oil mess and cooked like a quesadilla, tortilla on bottom, beans and meat (mixed together like burrito meat mix) and a little cheese & top with tortilla, flip once bottom is nice and crispy, then cook the other side until crisp. Then I added step of topping with tbsp of red enchilada sauce to give it a little kick and more cheese then broiled until cheese nice and bubbly. Topped with fixings and enjoyed!

Simple Hamburger Stroganoff

This is a great base recipe easy to tweak to your family's liking. Mine asked it be added to the regular meal rotation! I sliced and diced fresh mushrooms and onion I had on hand, cooking with the ground beef. Added a dash of garlic powder and nutmeg to the sauce mixture, and pepper to taste. Second time I wanted to make it a little healthier so used reduced fat cream cheese, light sour cream, and reduced to one can of soup. I did have to add a little more milk, but the end result was just as good!

No Fail Pie Crust I

Thank you!! I used to fail with pie crust, until I found this recipe! This dough is very easy to work with on floured surface after refrigerating 30-60 minutes. It's my new go-to recipe, with a couple minor changes. I mix in 1 tsp. of salt with egg, water & vinegar. And I use butter flavored shortening, it just tastes better in my opinion.

Stromboli

Great quick week night meal hubby & kids loved! I made two for our family of five, including two teenage boys. I had one pizza crust dough on hand and a crescent roll dough (not our favorite). I made one as recipe indicated and a Hawaiian with crescent roll dough. Next time I'm going to just make Hawaiian though for even quicker meal prep(Canadian bacon, pineapple tidbits & baby bella mushrooms) with pizza dough as is our family's favorite pizza toppings.

Baked Ham and Cheese Party Sandwiches

Great recipe, so easy to tweak to your liking. I make these as regular size sandwiches on busy weeknights for my family. Don't usually have poppy seeds on hand so I use toasted sesame seeds, which we prefer. Omitted the onions, we didn't care for them. I've quit melting the butter, prefer making it a spread that i put on top of cheese, inside the bun. I buy kaiser rolls from the bakery, but even hamburger buns have worked in a pinch. Occasionally change it up with provolone cheese too.

Polish Pickles

Someone always brings these to family holiday parties and events - never any left over! We use the Carl Budding corned beef thin lunch meat. Be sure to let the cream cheese come to room temperature, or you'll tear the thin meat when you go to spread it on. Yum!!

Yummy Roll Ups

We grew up making these for holidays and special events. The only difference is we've always used corned beef - the Carl Budding ultra thin shaved kind . Using ham makes them taste a little 'off' to me. We also always roll the pickles in the center, slice them into bite size portions, usually eating the ends as we slice them as they're not as pretty. they present very nicely on a serving tray, easy finger foods for people to grab, and no toothpicks required. Try them with the corned beef - you won't be disappointed!

This is great alfredo!! We always double the sauce, never seems to be enough, and serve grilled chicken on top. Be sure to let the sauce thicken before tossing though. Yum!!

Zesty Porcupine Meatballs

I also added some garlic and green pepper and fry up with onion until translucent since I don't like crunchy onions. I use an extra can of soup so I can add more to the meatballs too. And I pre-cooked the rice (and added a little more) as the first time I made the rice was still a little hard in some of them. With some modifications to personal taste they're delicious!!

Broccoli and Tortellini Salad

I've made with white vinegar in a pinch, still turns out good. Also prefer using Craisins. Tastes best made the night before (add sunflower seeds just before serving though), or at least given a couple hours for flavors to meld. Yum!!!

Sensational Sirloin Kabobs

We LOVE these!!! We omit the cherries and replace with zucchini from the garden. We've prepared the meat and marinade ahead of time and froze it for camping trips (meat/marinade then thaw in cooler) - turns out GREAT every time!! We also grill meat on separate skewers from the rest for more even cooking.

Easy Hawaiian Chicken Packets

I added baby bellas, zucchini & baby carrots I had to use up, tossed all veggies in some teriyaki marinade too. It was raining so I baked them in 400 degree oven on baking sheet in case the foil leaked (one did) for 35 minutes & served over herbed rice. Very easy & delicious weeknight meal!
