Chicken Enchilada Soup II

YUM! The only thing I did differently was to omit the 1 tsp salt, and the soup was plenty salty, what with the Velveeta the canned chicken broth the "enhanced with broth" chicken breast (you can't get any other kind of chicken at my market - not even whole chickens!). For variety, I can't wait to try it again with additions suggested by others - Ro-Tel tomatoes, corn, etc.!

Zucchini Brownies

Not really a brownie - but a moist and delicious chocolate cake! (I used canned frosting.) It's an amazing recipe - you don't need eggs, and you have no idea there's zucchini in the cake (I fooled my son - ha ha!). When you're mixing the ingredients you might think something's wrong with the recipe because it's so dry, but just keep stirring after you add the zucchini and it'll turn into a regular batter!

Praline Sweet Potatoes

YUM!!! The second time I made these, I adjusted the recipe for my own tastes: only used 1/4 cup sugar and 1 tablespoon vanilla with the sweet potatoes. Also, the recipe doesn't say what size casserole dish to use, but I would recommend a large one (like 13x9) - there is plenty of topping to cover it. THE BEST!!!

Emily's Famous Chocolate Shortbread Cookies

OK, but not great. Lacked the crispness you expect from a shortbread cookie, and flavor was average. Dough was sticky and needed refrigeration before rolling. Plain melted chocolate chips don't have the right consistency for drizzling or dipping (would perhaps need to add a little shortening) - so I ended up spreading it on with a spoon. Best with small, simple shaped cookie cutters. Very attractive cookie. I also did some small hearts where I frosted half with white chocolate - would be lovely for Valentine's Day.

Lemon Pie Bars

Awesome! Bursting with lemon flavor, and a melt-in-your-mouth crust. Easy to make. Oh, just writing about them is making me crave them... I'm going to the kitchen right NOW to eat one!!!

Beef and Noodle Casserole

My husband loved this dish (the Worcestershire sauce taste was a little too strong for me - I think I'll reduce it to 1T next time). Used dry red wine instead of sherry. Although it IS very easy to make, I wouldn't call this "a great recipe for busy mothers" when you consider all the things you have to wash: large pot for the noodles, colander, large skillet, garlic press, cheese grater and casserole dish.

Blueberry Pie

Perfect - simple and delicious. I, too, used 4 T. cornstarch. Didn't have the patience to make a lattice top, though - just popped on the top crust and into the oven it went. (If you're looking for a pie crust that's super easy to work with and won't get a soggy bottom, try "French Pastry Pie Crust" submitted by TJ.)

French Pastry Pie Crust

It's tasty, attractive, and produces a thicker crust than I've been using (which I like!). It held up to blueberries without getting soggy, and the bottom browned nicely. And the best thing: it's easy to work with - I've actually been in tears before while rolling out pie crusts that just won't hold together, have crumbly edges, rip when you transfer to pie pan...

Caramel Filled Chocolate Cookies

Awesome!!! Thank you, Lisa, for the best new cookie recipe I've tried in years (and I try a lot of new ones). I didn't have any trouble with sticky dough, but I had refrigerated the dough overnight for baking the next day. I also didn't bother with dividing the dough into pieces. I can't believe people said the cookie lacked flavor - it's so rich and fudgy, like a brownie!
