OH MY GOODNESS!!! These are IT! I did add the zest of one lemon and used 1 cup white sugar and one cup powdered sugar like someone suggested and these cookies arent even making it to decorations in my house...I'm about to make a second batch for Christmas eve/day. Rolls out nicely (leave them on the thick side, around 1/8-1/4 inch) and is easy to not waste any when rolled out in powdered sugar because you just knead it right into the next batch to be rolled out! (I find when rolling the dough out in flour, it gets dried out and become inedible.) Oh yes...roll the dough out in batches, refrigerate what you arent using. This is the last rolled sugar cookie recipe I will ever need!
