English Muffins

Yay! No more packaged muffins! I used a bread machine through the first rise & rolled mine out to about a half inch & let them rise an additional 45 minutes. Yummo!

Lemon Chewy Crisps

Puffs of lemon-aire! Following the advice of many former reviewers, I too used 3T lemon juice and rolled the balls in confectioner's sugar prior to baking. Yummo! This will definitely be a summertime staple in our cookie jar this year! Thanks Jennifer!

Asian Beef with Snow Peas

Yummo! Being budget-minded & having a large family, I happened to find some thin-sliced sirloin on sale, used FROZEN snow pea pods & for a health reason, put this over Whole Grain Barley. Fantastic!

Amazing Bacon-Wrapped Jalapeno Shrimp

I baked ours, with the exception of cholesterol, I think I've managed to make this MUCH healthier :) First, I par-baked TURKEY bacon in half-slices. This reduces both sodium AND fat and left the bacon pliable enough to wrap. Then, I cleaned & roasted 10 FRESH jalapenos in a drizzle of olive oil & a pinch of sea salt for about 10 minutes. Again, a reduction of sodium AND leaving nutrition in the pepper. Then, I wrapped about a 1/3 of each jalapeno & a half-slice of bacon around each shrimp & secured with a toothpick. I baked them at 400 degrees for 15 minutes. In addition, I prepared an "eye-balled" provolone cheese sauce for dipping. YUMMMMM!

Coconut Pecan Chicken

Much too sweet even though I added the cayenne! If I were to make it again I would not dredge - probably just brush with yogurt...Thanks for the experience and I can see how others might enjoy this dish.

Sugar Cookie Icing

Perfect! I used 1/2 t. cinnamon oil rather than the almond and reduced the milk accordingly for a crispy, spicy crunchy topping on the Best Rolled Sugar Cookies (big candy canes on a stick). I still cant figure out if this is candy or a cookie!!

The Best Rolled Sugar Cookies

In combination with the cinnamon flavored "Sugar Cookie Icing" I prepared, these big candy canes on a stick were a special treat!! I added an extra cup of sugar as other reviewers recommend and sprinkled it with confectioners sugar to keep it from sticking while rolling it out. These (for the first time ever)even satisfies my son's sweet-tooth with just one cookie! Amazing!!

Golden Sweet Cornbread

I took advice from other reviewers and added extra oil and baking powder while cutting the sugar nearly in half as well as substituted 1/3 cup dry milk and a cup of water. Simple, fresh and fabulous. Thank you all!!

White Chili with Chicken

to feed 15 I doubled this recipe with good results. To save costs, i made stock when cooking the chicken and substituted it for the broth. In addition, rather than use the canned beans, I cooked dry in the slow cooker. 1 lb. of beans is equal to 4 cans. In addition, I added some celery and cooked the beans with the sauteed onion, garlic and green chili. So flavorful and filling as well as healthy!

Roast Beef and Cheese Roll Ups

4 star dining in my kitchen! Due to other comments about the excess fluid, I added 1T Parsley flakes, 1/2 cup parm. cheese and cut the mozz. in half to cut excess fats as well as the fluid and salts others commented on. I used LaDonnas Spaghetti Sauce (5 star!) but only used enough salt in it to sweat the onion as other reviews lamented on the degree of sodium. Make it! Its beyond yummy!!!

Becky's Chicken Salad

After reading other reviews and knowing every pallet in the house, I used 1/3 of the mayo and 1/2 of the whipped cream. Of course with any salad recipe, we all add what will make our tongue dance! Thanks for the recipe and the cayenne trick!

Zucchini Patties

I absolutely adore this as a fall side-kick to our fish dishes! I use twice as much zuccini and half of the cheeses. In addition I use seasoned salt rather than regular for an extra kick. Picante is a fabulous topping! I will use this through out the fall!

Couscous Chicken Supper

The first time I made this, I made it exact. From there I knew what to add. Me? I don't care for much heat, but I did use 3 cloves of pressed garlic and used a lot less oil on the veggies. I love it! It's pretty healthy, low-fat and filling!
