Chicken Enchiladas II

This is just okay. I added cayenne and cumin as suggested and used 6 inch flour tortillas (all that was available). Followed everything else exactly and only had enough chicken mixture to fill 5 tortillas and they were swimming in the sauce. Don't think I'll make this again.

Lobster Bisque

AMAZING with the following suggestions taken from here: saute chopped onion and 2 minced cloves of garlic in olive oil before adding chicken broth, whisk 3 tbs butter with 3 tbs flour, use 1 cup half & half, 1 cup skim milk, 1/2 cup white wine, 1 tsp Worcestershire, 1/4 tsp cayenne, 1/4 tsp paprika, 1/4 teaspoon thyme, 2 cups lobster, simmer on low for an hour. Found this to be the perfect consistency, spice, and amount for 2!

Chicken Tortilla Soup V

Excellent with some minor adjustments. I cut the chicken into cubes and sauteed with onion, garlic, 4oz can of green chiles, and 1tsp cumin. Also used 1qt of chicken broth and as others suggested a can of black beans (rinsed) and a can of diced tomatoes. Topped with monterey jack, green onions, sliced avocado, and a dallop of sour cream.

Hamburger Pie

This is a staple in my house. My only variations are cooking a chopped onion with the meat and using only 1 can of soup. I also spread the potatoes evenly over the top and omit the cheese. LOVE!

Chickpeas in Tomato Sauce With Feta and Wine

This looked awful, but tasted pretty good. I didn't drain the tomatoes as others suggested and added extra feta (although I don't think that was neccessary). I would also suggest using less oregeno.

Cauliflower Supreme

Good side dish or meatless main. A little heavy on the butter though, so I would probably half it next time. Also seasoned with a little curry powder. Delicious combination of flavors.

White Bean Chicken Chili

Yum! As others suggested I used rotisserie chicken, frozen corn, and 1/2 jar of salsa verde. I also used fire roasted diced tomatoes. So good and easy.

Tim Perry's Soup (Creamy Curry Cauliflower and Broccoli Soup)

I can't get enough of this soup...quick, easy, and SO GOOD! Make sure to finely chop the veggies, so it comes out thick. And don't omit the curry, it is the key ingredient. Also, good with vegetable broth and bouillon. Thank you, Tim Perry!
