Chicken Enchiladas II
This is just okay. I added cayenne and cumin as suggested and used 6 inch flour tortillas (all that was available). Followed everything else exactly and only had enough chicken mixture to fill 5 tortillas and they were swimming in the sauce. Don't think I'll make this again.

Lobster Bisque
AMAZING with the following suggestions taken from here: saute chopped onion and 2 minced cloves of garlic in olive oil before adding chicken broth, whisk 3 tbs butter with 3 tbs flour, use 1 cup half & half, 1 cup skim milk, 1/2 cup white wine, 1 tsp Worcestershire, 1/4 tsp cayenne, 1/4 tsp paprika, 1/4 teaspoon thyme, 2 cups lobster, simmer on low for an hour. Found this to be the perfect consistency, spice, and amount for 2!

Chicken Tortilla Soup V
Excellent with some minor adjustments. I cut the chicken into cubes and sauteed with onion, garlic, 4oz can of green chiles, and 1tsp cumin. Also used 1qt of chicken broth and as others suggested a can of black beans (rinsed) and a can of diced tomatoes. Topped with monterey jack, green onions, sliced avocado, and a dallop of sour cream.
