Best Egg Rolls
I made these last night and they were very good. I know some people get upset when people leave comments on a modified recipe but I love reading people's modifications. I followed another reviewer and used a hot and spicy pork sausage and it definitely added a kick. I cooked the sausage and drained it and then threw in the carrots, cabbage and ginger (because I didn't want the ginger flavor to be lost when I drained the fat off of the sausage). I also added a few dashes of soy sauce and cooked this mixture about 2 minutes so the cabbage wouldn't be super crunchy. I shredded the cabbage and carrots on my cheese grater and it made short work off it. The rolling up the egg rolls was much easily that I thought. If fact the whole recipe was easy and not very time consuming. Thanks for a great recipe.

Bow Tie Pasta with Sausage and Sweet Peppers
This dish was great. I used half Hot pork sausage and 2 brats of salsiccia sausage (that I pulled out of the brat skins) and I sauted it all and left it in big chunks. I probably added more than a 1/2 cup of water because I wanted more sauce and I put 2 beef bouillon cubes (to make it a beef broth). Then I stirred in about 4 ounces of cream cheese and let it melt and it was delicious. I also didn't drain the juice from the sausage. This is definitely a keeper!

Tortilla and Bean Soup
This was a very good, easy and healthy recipe. I was surprised it had so much flavor. I modified the recipe a bit though. I made a half portion so I used 3 cups of water and boiled 2 chicken breasts in there and then shredded the chicken. I used two cans of beans (pinto and great northern beans) and I pureed a few of the beans and a little of the diced tomatoes to try to give a little more thickness and flavor to the broth. Overall, it was really great.
