About this Cook
I have been registered dietitian for 20 years! I am also a certified diabetes educator. My Mom and maternal Grandmother taught me how to cook. I have picked up more techniques over the years that has added to my cooking repertoire.
My favorite things to cook
I don't think that I have a favorite thing. I do go through different phases of cooking interests though. So we tend to have a lot of variety at my house. I spoil my family because I make most things homemade.
My favorite family cooking traditions
Goulash, potato soup, biscuits and gravy, etc - this could be a very long list. I watched my Grandmother make potato soup quite often. Not any healthy things listed here so we don't have them often.
My cooking triumphs
Learning to make real Italian Meatballs, homemade Baked Macaroni and Cheese, and homemade pizza.
My cooking tragedies
I can never get my pie crust in the right shape.

Easy Slow Cooker French Dip
Used many of the recommendations by other reviewers. I typically use only a name brand soup & broth in this recipe. It does cost a little more but your end product tastes better. I had to call a friend to ask what kind of beer we should use because we do not drink alcohol at our house. I have used a well known Boston Lager many times and it seems to work the best. Leftovers freeze pretty good.

Tangy Slow Cooker Pork Roast
Made it as is. Family loved it. One of my kids is going through a season of "I don't eat pork," and he even liked it. Goes very well with a French version of scalloped potatoes that one of our French friends made. No leftovers!

Layered Chicken and Black Bean Enchilada Casserole
My kids don't really like any food that has a Spanish or Mexican foundation. But they love this recipe. I have discovered at the last minute that I didn't have chicken breast and ended up using ground beef. I know it wasn't as healthy but it still turned out great.
