Emily's Famous Hash Browns
I was looking for a hashbrown recipe to have with some german style roast pork and sauerkraut. I decided to give this receipe a trial run this afternoon to see if it would work out. Half way through making the hashbrowns, I realised I had no egg. I tried to think what else I could use to help bind the hashbrows. I added about 1/2 cup of grated cheese. I also added paprika and a sprinkling of dried mixed herbs. I was very careful when frying them making sure they stayed together. We ate them as a snack with tomatoe sauce. Everyone loved them! Will definetly be using this receipe again!

Chickpea Curry
Ever since first trying this recipe in September, it has become a regular dinner in our house. Its a favourite when we are all a bit broke, and only have a few dollars to buy a few ingrediants. So its very economical! A few changes I make: I use one can of chickpeas (drained) I add one can of crushed tomatoes. I add one chopped birds eye chilli (for a bit of bite) If I want to make the curry a bit bulkier, I add some par boiled sweet potato or pumpkin.

Apricot Chicken III
I made this recipe last night for my boyfriend. It was super simple, and I followed the recipe exactly. The only change I made was I used drumsticks instead of thighs. I served the chicken with steamed bok choy with a drizzle of soy and sesame oil, and some steamed rice. Next time I'd like to try and marinate the chicken in the nectar, and also cook it for a bit longer. Will definetly be making this again!
