Breakfast Brownies

I made these for my son breakfast. He is a picky eater and he cannot bring anything with peanut or nuts to school. Ineeded something that he can quickly eat or else he get bored. the only change I made was to add cocoa powder

Irish Root Soup

I liked cooking this soup. However the puree procedure is WAY too complicated and long for me. I put the carrots and the potatoes in at the same time and cooked it. Then I pureed the whole soup. I serve this to my 4.5 yr old and my 11 month old sons so we do not need texture! I used an immersion blender to puree it.

Onion Chicken in Balsamic Sauce

Loved this. It was easy and quick to make. I made it with drumsticks in error (I did not label the freezer bag oops). It smelt amazing in the house as it was cooking

Honey-Glazed Chinese Chicken

This was easy to make, quick and simplistic. Nothing WOW 5 stars about it. I used my foodsaver marinator to marinate the chicken which made it quicker. I am not a fan of drumsticks, so next time I will try it with chicken thighs

Raspberry Lemonade Pie

Very easy to make and it was a big hit. My family gobbled it up. I found the lemon flavor to be perfect, and not too strong as others found. We used fresh raspberries from our yard.

Crescent Pizza Pockets

Amazing and easy. My husband made these at my request as I can not have dairy. He made mine without cheese. Everyone at my office was drooling over my lunch. A good trick my husband found was to put the sauce and meat toppings in a food processor. I thought it was gross, but when I tried it I was a convert! We used the instant pizza dough package. We put pepperoni, left over bacon and leftover breakfeast sausage. YUMMMY! I like mine with more sauce though.

Golden Yam Brownies

Amazing! My 2 year old could not get enough! Even my mother loved these! I give a 4 star only because the original recipe has too much sugar and butter I modified this a little to make it better for my son, and based on previous reviews: •¼ cup each butter and applesauce •½ cup packed brown sugar • ½ cup white sugar • 1 tsp cinnamon • 1 tsp ground nutmeg •¼ tsp ground ginger •¼ tsp ground cloves • 2 cups peeled and finely shredded sweet potatoes •1 cup raisins

Best Carrot Cake Ever

This is the best carrot cake ever! My son who is 2 years old loves it. If he sees the cake he yells “Cake, Cake, Cake!” I omitted the nuts, put ½ oil ½ applesauce. And sometimes I add a ½-1 tsp of nutmeg for more zing. It freezes very well, and you can make cupcakes as well.
