Pumpkin Spiced and Iced Cookies

Reviewed: Oct. 23, 2008
Really different and very good. I dont like pumpkin pie but like pumpkin bread so I was hoping these would be something I could enjoy :) I was right. These are a nice change to cookies. I think the icing makes the cookie have just enough of what it needs to make it perfect for me. Thank you for sharing. I am a major cookie lover so this is going into my cookie recipe folder :)

Spanish Rice II

Reviewed: Oct. 17, 2008
I really loved this recipe :) I couldnt stop digging into the rice as if it were the main dish. I am not a huge rice fan but love spanish rice and this was excellent in taste. The only substitute that I made was I used a can of plain petite diced tomatoes and added about 1 TSP of diced jalepenos (the ones from a jar)' instead of the tomatoes with chiles. Thank you for sharing this recipe. This is going into my favorites folder.

SUGAR 1/2 CUP WATER 1-2 TBSP CORNSTARCH For the cream cheese mixture: BEAT cream cheese, powdered sugar, butter, vanilla, and sugar in small mixer bowl until smooth. Chill. 1 teaspoon vanilla extract 1 cup powdered sugar 6 tablespoons butter or margarine 1 (8 ounce) package cream cheese 1 cup granulated sugar

Day Before Mashed Potatoes

Reviewed: Dec. 2, 2008
WOW! I dont know who said to add the chives and onion cream cheese but yummy! I also used the yukon gold potatoes as suggested and some extra milk and butter and garlic powder :) This was a great recipe. I made it the same day and kept warm but loved it. I think this is my new mash pot. recipe. I want to try it with cheddar cheese and bacon pieces next time :)

Blueberry Buckle

Reviewed: Dec. 13, 2008
Very Good. My family loved it. I changed nothing other than tossed the blueberries in flour (I used frozen). I did have to bake it longer than suggested however (possibly due to the frozen berries). Thank You for the great recipe.

Rustic Autumn Fruit Tart

Reviewed: Dec. 2, 2008
My family loved this but we made it into a pie instead. I used double the pastry recipe and double the tart recipe and added to a pie dish and baked as I would a pie until done. It was a little more tart than I care for but very good. I would probably increase sugar to reduce tartness (I used 6 Granny Smith apples to make the pie) or use different type of apples. I will definitely make again as it was very good and theres not a bite left after the 2nd day :) Thank you so much. The pastry is very easy to make in the food processor.

I thought I had rated this! I cant belive I hadnt rated this yet. I made this a long while back ago and I have to say this is the closet and easiest thing to homemade Chicken & Dumplings that I have tried. I was quite shocked at how well they came out honestly. Thanks for sharing. I will be making these again soon!

Barbecue Ribs

Reviewed: Nov. 22, 2008
Very Good! Husband raved over them. I know that if they had been on a grill they would have rocked but it was cold and I was looking for a good recipe for the oven and this was it. I had to make a homemade chile sauce since I didnt have any on hand and did not have rum (but used 1/2tsp rum exract) but hoping to make exactly as written next time minus the rum (personal choice). Very tasty. I enjoyed them more after they sat and rested and cooled off I think. The flavors seemed to have come together more at that point. Thank you for a great oven rib recipe!

Cream Cheese Jalapeno Hamburgers

Reviewed: Aug. 5, 2008
Excellent burgers! I will continue to make them this way now :) Thank you so very much for the recipe. I did only use 1 block of cream cheese w/2 lbs of Hamburger and it was plenty also I did add 2 TBSP Garlic Powder to mine and 1/4 c diced jar jalepenos (what I had on hand). I also made the kids some without the jalepenos and added garlic herb seasoning from Mrs.Dash to theirs :) Very moist and juicy burgers with loads of flavor. I can not wait to have these again.

Soft Chocolate Mint Cookies

Reviewed: Aug. 4, 2008
I am rating this a 5 even though I altered the recipe some (to accomodate for what I had on hand). It was a wonderfully soft and delicious cookie even the next day :) Thank you so very much for sharing this recipe. Now a new favorite of mine. It inspired a different variation from myself. I didn't have unsweetened chocolate so I used about 1/3 but probably should have went to a 1/2 cup unsweetened cocoa powder (just to give it more color: it was more the color of a choc chip cookie base) and I omitted the mint extract and used Andes Baking Mints instead. This cookie still was excellent and perfect with Andes. I can hardly wait to try it with the chocolate in it :) TYSVM I think this would be great without the chocolate and mint and instead use with receses pieces baking pieces or something similar also.

Reviewed: Mar. 4, 2008
MY GUY DEFINTELY APPROVED :) The name says it all :) I didn't have a couple things so I substituted however I can't wait to try this again with the original ingredients. We loved this. My hubby ate almost the whole meatloaf in a 24 hr time frame..eek..he loved it and he's not crazy about reg.meatloaf. Here are my changes: 1 cup crushed potato chips (I used corn flakes) 1 pinch cayenne pepper ( I used 2 pinches) 6 slices bacon (Omitted due to having none on hand) This tastes so good fresh baked :) Thanks for posting this. Broiled Tilapia Parmesan

Reviewed: Sep. 3, 2008
The topping taste wonderful but blah I am so not a fish eater and was hoping this would make me like fish more. It didn't. I think I will use this on chicken next time and see how it tastes :) Thank you for the recipe as it is perfect. My husband liked it as well as the kids. I just am not a lover of any fish I guess.

Vietnamese Iced Coffee

Reviewed: Sep. 12, 2008
I didnt make this exactly as written but it gave me the general idea of what to do finally! I have long tried to find the right sweetness to get a good frap. I finally have that thanks to you :) I can deter my hubby's daily Starbucks habit now :D lol. I made a frap using the following: 2 cups Strong Cold Coffee,Ice to desired thickness maybe 1 handful or two I used??? and 1/2 cup of Sweetened Condensed Milk. Blend until combined well. Making sure to get all those pieces of ice chopped up into fine bits of nothing :) I even melt about 1/3 Cup Andes Mint Baking Pieces along with 1 TBSP milk in the microwave and pour into the blender (you can also add choc syrup)and yummy a mocha mint coffee frap :) This was just absolutely wonderful. I never drink hot coffee but I love this stuff! Thank you for the inpsiration and I am sure your recipe is excellent as written but I didnt have the coffee beans on hand :)

Creamy Hot Cocoa

Reviewed: Sep. 17, 2008
Perfect taste of chocolate and I always love the addition of the salt. It gives this hot cocoa the extra touch I enjoy. I was out of half & half so I just left it out and this was still excellent. Thank you for a great chocolaty drink recipe...too bad these restaurants and vending machines cant duplicate this. I always find those places to have watered down hot choc. and I just hate it. This is the real deal :)

Peppermint Patty Brownies

Reviewed: Sep. 8, 2008
Very good brownie. I did leave mine in too long I think. It was still very moist and although fudgy I would say that it is more on the cakey side (or at least mine was). My mints melted and sank to the bottom :( I think due to the overbaking. I will try these again and try not to leave them in too long this time. It just seemed like they were not done when I kept checking them. TY for the yummy recipe.
