Pumpkin Coffee Cake

Great recipe! I had half of a small pumpkin leftover and half a contianer of sour cream I wanted to use up. I just peeled the pumpkin and chopped it into small chunks, then cooked it in boiling water until mushy. Make sure to drain out all the excess water from the cooked pumpkin. Then simply mash it. It was really easy to prepare the pumpkin, and tastes great in this coffee cake. The sour cream makes it really moist and delicious.

Lentil Soup

Tastes great! It is so filling because there is a lot of fiber and protein in it, but without all the fat and sodium that is in a meat based soup. Wow this is good. I will make it a lot. I also used balsmic vinegar, as suggested by the last reviewer. Good choice for fall/winter months because it doesn't require and spring/summer vegetables. Awesome for vegetarians, but non-vegetarians should not be afraid to try it just because there is no meat. Tastes great and healthy too. Expand your dinner options. Eat local seasonal food. You can do it!

Thai Curry Tofu

I recommend to add some curry paste, cury powder is good but does not provide anough flovour on its own. Don't use light coconut milk. I used light because I thought it would taste the same and I think it made it taste a little bland. Added some chopped carrot and a tiny can of bamboo shoots, available in the ethnic food section of any grocery store.

Honey Comb Coffee Cake

Honeycomb coffee cake is not a typical coffee cake, but it is a good recipe. The topping was not my favorite, however my boyfriend thought it was great. It reminded him of a southern carmelized pecan candy. I think the candy flavor is due to the almond extract. The cake batter seems to be way too thick, but don't worry it bakes wonderfully. Just spread it into the pan as best you can. The topping seeps into the cake while it bakes.

Light Oat Bread

WOW! This bread is so nice! Put all ingredients it in the machine on dough setting. Dumped it into a regular bread loaf pan. Let it sit covered to rise for half an hour. Baked in a preheated oven at 345 for 45 min. I live at 2600 feet elevation so I used slightly less water and slightly less yeast. I used quick oats instead of rolled oats. The bread is deeeelicious! My first really great loaf of bread, thank you very much.

That's pretty good :) Thanks. I will make again. I love a cheesy sauce. However, I don't love saucy cheese. To the review that reported there were cheese lumps in her sauce... cheese melts, duh!

Vegetarian Tortilla Soup

I substituted the cans of vegetable broth for veggie stock/broth cubes. They are cheaper. They worked great. I used 4 with a little over 4 cups of water. I used fresh jalapeno peppers instead of chillies from the can, also cheaper. This soup tastes just like what you get in the Mexican restaurant. Don't skip the avocado!

Curried Wild Rice and Squash Soup

To save on dishes and extra steps, I made this delicious recipe using only one soup pot, one soup bowl, and the blender. You will appreciate this if you have no dishwasher :) Caramelize the onion with a little butter and brown sugar in a large soup pot. Add in crushed garlic when the onion is almost fully cooked. Remove cooked onions from pot and set aside to cool in a soup bowl. Boil the chicken stock in the same large pot, reduce heat and cook the squash until it is tender. Remove from heat. Use a masher to mash squash while it is still in the pot. Add orange juice curry and any other seasoning. Let all the ingredients cool off a bit. Combine the caramelized onion with the squash broth in blender and blend. Return to the large pot. Heat to a boil, add rice, reduce heat, and adjust seasoning. Once the rice is cooked the soup is complete. Tip: the more pale the squash is at the grocery store, the less ripe it is, so choose one with more color.

Early Morning Oven Roasted New Potatoes

This is a good recipe. I would recommend adding fried onion and some dried red pepper and maybe garlic. That is a personal preference. You may like them without these additions. Thank you!

Thank you for the recipe. It is great the way it is written. It is also great with or without onion and garlic. Add the things you like leave out the things you don't like. Now quinoa is one of my favorite things to make on a regular basis.

Pasta with Hot Sausage Sauce

Thanks for the great idea. This was really good. Versatile basic sauce, I didn't have capers so I left them out, it was still delicious. Did not need a jar of sauce, the other ingredients were enough. Also, a good sauce even without the sausage as a vegetarian option. I will try to never use sauce from the jar again. It is so much better this way. Thank you.
