Baked Sweet Potato Sticks

Really tasty side dish and a great way to eat sweet potatoes. Thanks for sharing this great idea. I just wish they were crispy on the outside. If anyone knows how to make them crispy on the outside, please share!

Zucchini Brownies

I followed the recipe: The batter did not blend, there was not enough liquid to completely stir the flour mixture into the liquid mixture, and the result was a crumbly dry batter. After baking, the crumbles remained and the batter was still a little dry, not the consistency of a "moist brownie." Didn't anyone else think there was too much salt? They taste salty and I think the recipe called for too much. Next time, I will modify the recipe to add more liquid (egg, applesauce) and use less salt. With those modifications, it should be a pretty good brownie recipe!

Annemarie's Lemon Bars

These are good, but I will keep looking. The bottom layer crust reminds me too much of shortbread. I am looking for something that tastes like the lemon bars I had in the past with a lighter crust. TIP: If you make them ahead, say to bring to a party, do not dust with powdered sugar until the last minute or the sugar may dissolve into the lemon, especially if there is a temperature change.

Nanaimo Bars III

I cut out an entire cup of confectioners sugar in the middle layer, it was NOT missed, and I highly recommend freezing them. OK, this is strange but, at first I thought they were WAY too rich and sweet. So I cut them into small portions and wrapped them and put them in the freezer. After they were frozen I think they were somehow much better. It is the middle of summer and very hot here, so maybe they needed a blast of cold (They are from the NorthWest after-all). They didn't become too hard to bite and were so much better from the freezer. So I put some into tupperware, brought them to work, kept them in the freezer all morning, brought them out right after lunch, and people were like, "OMG What are these, is this fudge, this is soooo good, what is it?!"

Homemade Black Bean Veggie Burgers

These are very good and they are easy to grill. I made sure to keep adding bread crumbs until they were nice and solid. I also took the advice of others and drained out any liquid from the beans and vegies.

Tomato Spiral Toss

Delicious and full of basil flavor. Taking the advice of others, I heated up the olive oil with a splash of red wine vinegar, then add in garlic, saute, add in basil and tomato a pinch of Italian seasoning, and a pinch of crushed pepper flakes, salt and pepper, heat through...viola. Add to the cooked pasta, stir, eat.

Peach Muffins

good muffins... Using less sugar is always an option and I found that using just under 2 cups was plenty sweet. I cut back on oil too, and used some water and added a splash to make it mix better in the end. The peaches do release juices when they are baking so don't worry if the batter seems thick, it's not. Thanks again. Also added a dash of ground ginger and a splash of vanilla extract

Angel Hair with Feta and Sun-Dried Tomatoes

Good. I made it with asparagus. Blanch or steam the asparagus for a couple minutes. Not too long, I hate mushy asparagus. Added it into the dish in bite-size pieces. Added some olives too.

Banana Muffins II

Thank you! These are great muffins. I took the kind advise of others to mix minimally. They were not too dry. I like to cut back on sugar so I used 1/2 a cup instead of 3/4 cups. They still tasted perfectly sweet so don't be afraid to reduce the sugar. Great warmed up again with a little honey or butter.

Whole Wheat Banana Nut Bread

Thanks for the recipe. It was on the dry side the first time I made it, but it was still good. It is a refreshingly healthy banana bread, not too sweet. I made it again and used more banana and a little less honey and some brown sugar, and replaced 3/4 cups of wheat flour with 3/4 cups of white bread flour. This second loaf was much more moist. Thanks again.

Extra Easy Hummus

Thank you! I also used more garlic and less cumin. Added some lemon juice too. Now I realize hummus is just chickpeas, garlic, salt, lemon, oil, and whatever else you like.

Pasta with Hot Sausage Sauce

Thanks for the great idea. This was really good. Versatile basic sauce, I didn't have capers so I left them out, it was still delicious. Did not need a jar of sauce, the other ingredients were enough. Also, a good sauce even without the sausage as a vegetarian option. I will try to never use sauce from the jar again. It is so much better this way. Thank you.

Quinoa and Black Beans

Thank you for the recipe. It is great the way it is written. It is also great with or without onion and garlic. Add the things you like leave out the things you don't like. Now quinoa is one of my favorite things to make on a regular basis.

Early Morning Oven Roasted New Potatoes

This is a good recipe. I would recommend adding fried onion and some dried red pepper and maybe garlic. That is a personal preference. You may like them without these additions. Thank you!
