Cranberry Bars

A delicious cranberry dessert! Where the recipe called for 1 cup white sugar, I used 3/4 cup. Where the recipe called for 3/4 cup brown sugar, I used 1/2 cup. The bars are still very sweet with the reduced amounts of sugar and next time I will use slightly less sugar still. Easy to make too.

mmmmm.... good! Thanks! I also added cinnamon sugar on top and added a bit of cinnamon into the batter and a little splash of apple cider because the batter seemed thick.

Vegan Davy Crockett Bars

I reduce both sugars by 1/4 cup. Added 1/2 cup of applesauce to the oil and vanilla because the other reviews convinced me to add some moisture. The applesauce keeps it vegan, unlike the egg that another review suggested. Pushed the dough into prepared 9x13 glass baking dish. Baked 350 for 30 minutes. I just ate a piece and it is delicious, still warm. I think they will cool and cut well. My version is thicker more like an oatmeal chocolate chip cookie bar. I use vegan chocolate chips from Whole Foods and they taste just the same as regular. This recipe is similar to the cowboy cookie mix in a jar recipe that I made from this site.

Baked Spaghetti Squash Lasagna Style

Great idea! This is the best way I've ever had spaghetti squash! I did not use olives, but had some zucchini saute with olive oil, onion and white wine. I also used sauce from the jar since I had some leftover from another dinner. I added fresh basil in there too. I used a baking dish since it seemed much more fool proof! thank you for sharing this great idea.

Oatmeal Blueberry Muffins

they are a strange texture and don't have much flavor. Most of the reviews have like 20 alterations, but I just followed the recipe. I think they could use a bit more sugar, and I usually think baked goods are too sweet. They are on the small side if you make 12 traditional sized muffins.

Rhubarb Stir Cake

This is a delicious cake, and it was easy to make. I didn't know rhubarb is so good. I only had 4 stalks to use, so that was more like 2 cups of rhubarb. I substituted allspice for nutmeg. I think I could have baked if for another 10 minutes in addition to the 40 minutes, because it was a little too moist in the middle. I will try to make this again this spring.

Cranberry Orange Loaf

Great following the recipe exactly. Also, using slightly less orange juice, I shaped the dough into scones and bake for half the time. I used 1/4 cup less sugar, and 3/4 cups of the flour was King Arthur white whole wheat flour. Really good. The whole fresh cranberries and orange flavor is awesome. Not too sweet.

Cowboy Cookie Mix in a Jar

Used Quick oats. Reduced white sugar to slightly under 1/3 cup. Layered the flour, baking soda, baking powder, salt first so the presentation looks really nice. Reduced choc. chips to 3/4 cup and used slightly less pecans, made some cookies smaller and some bigger. I like the smaller, they cook in 12 minutes, the bigger needed some more time. Making smaller cookies, the recipe should make 30 cookies. Cookies baked nicely, didn't flatten out, were easy to make, taste great, are different, and a nice gift idea. One question: where do cowboy cookies come from, I never heard of them before?

Spaghetti Squash with Pine Nuts, Sage, and Romano

I thought this would be a good flavor combination since I like pine nuts with brie and honey and I like sage and I like spaghetti squash, but it just didn't taste good together. The pine nuts were overpowering the whole thing. I gave it 3 stars because I'm thinking I am the odd ball here.

Bavarian Apple Torte

I just baked this and man it is nice. It looks like I paid $20 for it at a bakery. I used an 11" tart pan because that's what I have, and I have to say, this worked out great. Baked for the recipe's minimum recommended time and it set just fine, isn't runny or anything. The crust was so easy to make, I just stirred it up with my hand. For a beautiful presentation it is so worth the effort to arrange the apple slices neatly "It's not a work of art it's food," no it's a work of art.
