Espinacas con Garbanzos (Spinach with Garbanzo Beans)

I was craving this dish after having it at a tapas restaurant and this recipe was the perfect fix! I liked the suggestion of adding a little chicken broth for some extra depth. I also threw in a some cayenne. I'm the type of girl that usually needs some sort of fish/chicken to feel like I'm having a complete meal but this is a great quick and filling meal.

Cinnamon-Roasted Almonds

These are the closest I can find to what they serve at fairs. I double the cinnamon and use brown sugar for half the sugar it calls for. Be sure you grease your pan otherwise they're a huge pain to scrape off!

Paul's Pumpkin Bars

If you're looking to make actual "bars" don't use this recipe. If you want to make an incredibly delicious pumpkin cake, you'd be crazy not to try it - it's sooooo good! The second time around I halved the recipe, then added some nutmeg and ginger. I also didn't make as much icing as it called for bc I thought it was a tad too sweet with the original amount.

Zeppole

I've made this a couple times, and would definitely recommend using a thermometer. One time I didn't, and they came out raw in the middle (a bite I wouldnt wish upon anyone!). They really are inredibly good, whether they're exactly like the zeppole you've had before or not. Cinnamon sugar is my favorite topping for these :) Guests are always impressed as well!

Holiday Brie en Croute

I'll be honest, I thought this was a strange combination but my friend swore up and down it was amazing - and she was right! Didnt include cranberries, and used toasted walnuts instead of almonds. A delicious susprise that is a nice change from standard hors d'oeuvres.

Chocolate Cookie Cheesecake

Combining cheesecake and Oreos into one dessert is a genius idea if I've ever heard one. I did what one person suggested and left bigger chunks for the cookies in the middle, which I think was a great switch. Also, needed more cookies for the crust. Melted choc chips, put in a plastic bag with a tiny piece of the corner cut off to drizzle on top (thought it would be too chocolately otherwise) and it was so tasty! My friend requested it as her new official birthday cake :)
