Butternut Shrimp Soup with Sherry

This was really good. I have to say that this made more like 5 servings even though I used 1/2 pound of shrimp instead of 1/3 and a bit more squash. Also, I didn't puree any of the shrimp because I liked being able to really taste them. I think next time I will try quickly sauteeing the shrimp with some spices before adding them to the soup. I have to say that although my husband was at first skeptical of the combo of pears and squash, we both loved it!

Whole Wheat Blueberry Pancakes

These were so dry as is! I had to add nearly one extra cup of milk. I also added cinnamon and vinalla for extra taste. With those changes, they were pretty good, although still more cake-like than I am used to. I am going to try a different recipe next time but may at some point come back to experimenting with this one.

African Sweet Potato and Peanut Soup

Coconut Tofu Keema

I have made this recipe several times and am surprised each time by how tasty it is. Do NOT be afraid to adjust the recipe to your tastes. For example, I add cauliflower and think it improves the dish quite a bit. I also adjust the spiciness depending on who I'm cooking for. Be sure to taste it often while it is simmering and add spices, etc. accordingly. It does make a lot of food but keeps well. Yum!

Lasagna Roll Ups

This was so yummy! I also had fun with the rolling but make sure you aren't in a hurry and are in the mood to cook. They really weren't difficult at all to do. However, I would suggest that after the noodles are done boiling, drain and seperate them and then let them cool for a few minutes before rolling. I added chopped mushrooms and very finely chopped onion and garlic to the cheese mixture but I can't seem to make myself cook without garlic and onions!Personally, I think the onions especially added to the taste. To give people making this for the first time an idea of how many lasagna noodles you need, I used 18 noodles in a 9x13 pan. I had three rows of six noodles. Also, I put a small handful of cheese mixture in each noodle. I'm always looking for recipes that work well with two people in the kitchen and this is definitely one of them! My husband and I chatted and drank wine while filling and rolling the noodles.

Tofu Keema

I have made this recipe three times in two months and it is ALWAYS a hit. It is great when made exactly from this recipe but I also make a few changes. First, I tend to add more of the spices because I like things with a ton of bite. Second, it is even better with some cauliflower. Yum! The cauliflower absorbs the spices wonderfully. I've never had this come out dry and the leftovers taste great!
