Paella III

I love that I could make this in the oven in a big roasting pan vs a paella pan (I doubled the recipe). I just checked it every 20 minutes, added more broth if it looked dry and cooked it probably for about an hour in total. I did use Arborio rice which made it more creamy than traditional paella, but I liked it much better this way. I also didn't add the shrimp and added scallops until 15 minutes before taking it out as it seemed like putting them in for an hour would dry them out. Guests devoured it.

Won Ton Snacks

Think the recipe was supposed to be pork sausage perhaps, as I found this very dry. I added some ginger to it and some sherry to add some flavor as well as threw in some shrimp when I didn't like it with jsut pork, but ground pork was dry and dind't taste very good.

Simple Creamy Lemon Chicken Sauce

Yummy and easy. I had breaded cutlets/small pieces of chicken and cooked that in large pan. Then put the cooked chicken in the oven to keep warm and made this sauce by deglazing the pan with about 1/4 of white wine and the ingredients listed here, but I skipped the butter and added dried thyme. Super easy and delicious over chicken, rice and broccoli.

Quick and Easy Green Chile Chicken Enchilada Casserole

This is a great starter recipe - I started with cooking onions and garlic in olive oil until soft, then added that to shredded chicken (store bought roast chicken) along with spinach and added the sour cream. I also added some red enchilada sauce to it (maybe 1/2 cup). it was fantastic. On leftover day, i poured more of the red enchilada sauce on top to keep it moist and loved that flavor as well.

Buttermilk Syrup

Should be called "Caramel Sauce" as that's what it tastes like - yummy goodness. I used 1 C sugar and served it with pumpkin pecan pancakes and the whole thing tasted like pecan pie. Delicious treat.

Pumpkin Pancakes

Very good - I added some extra cinnamon and 1/2 t of ginger. Made a batch with chopped pecans and they were delicious! I also made a caramel sauce ('buttermilk sauce' from this site) and the whole thing tasted like pecan pie. mmmm

Double Chocolate Chunk Cookies

Amazing and easy - these are really rich and chocolatey and taste like cookies from Specialties. Came out perfect after 11 minutes. For 1/2 the batch I added dried cranberries and topped with a pecan - both ways were delicious!

Pepper-Honey Cedar Plank Salmon

Very good and easy - first time cooking on a plank and used one Hickory and one Cedar. The Hickory was more flavorful and more popular. I loved the sauce and a little goes a long way (it was a bit too much spice for my son). Great easy recipe for a big gathering/bbq.

Homemade Vanilla Pudding

I did not care for this. I was looking for a simple pudding recipe without eggs, and this is simple, sweet and without eggs, but I found the taste to be super sweet and a 'flat' flavor. I'm giving it 2 stars because my 7 year old liked it, of course, because of the sugar, but I don't think this was tasty for adult tastebuds at all.

Followed recommendations of others - 4eggs and 1/2 C. Sugar. Had to cook for much longer to get them dry (reducedto 200 degrees for additional 1/2 hour then left in the warm oven for 1/2 hour).

Avocado Shrimp Ceviche-Estillo Sarita

Good - but, like the others, you need to 'cook' this overnight. I tried for 6 hours, and then had to resort to nuking in the microwave. I also added cucumbers to it. Guests loved it.

Greek Pasta Salad with Roasted Vegetables and Feta

Great, standard pasta salad - I boiled orzo with boullion for extra flavor and didnt need the feta as it was flavorful enough. Good summer barbeque side salad.

Light Oat Bread

OMG. Someone please stop me from eating the entire loaf in one sitting! Amazing bread and very easy. I used 1 C Whole wheat/2 cups bread flour, honey instead of brown sugar (3 T) and added 3 T of gluten. I am a bit worried about my waistline, though, as I see myself eating much more bread after finding this recipe.
