Gingerbread Cookies II

Excellent soft gingerbread cookies. I have received many compliments!! I must have been using potent powdered ginger: unlike other reviewers, I found my cookies to have a hot ginger taste. As suggested by others, I doubled the cinnamon & added 1/2 tsp allspice. Next time I would leave the cinnamon at 1 tsp, to keep the ginger dominant. I used 1/2 cup shortening (all I had on hand) and 1/2 cup margarine. I did not notice a 'molasses taste'. I recommend rolling the dough out between 2 pieces of plastic wrap, rather than using a floured surface, to reduce the risk of dry cookies. Bake only until the cookies don't look wet. They will be sturdy but still soft when cool.

Plum Blueberry Upside Down Cake

Very pretty (looks impressive!) & tastes good. The glaze makes the fruit very sweet, but whipped cream/cool whip balanced this out. Overall I was very pleased with this cake & will definately make it again.****2005 I have made this with success again & again. I have to admit, though, I now add 1/2 tsp of cinnamon to the batter.

Hard Chocolate Glaze

I used this on sugar cookies: I dipped my Hallowe'en cat cookies right into the bowl. It made a tasty, firm (not hard) coating. I made half a recipe, and used chocolate chips: 1/4 cup of cold butter with 5 oz of chips in the microwave for one minute, then stirred. They were awesome cookies!

Mashed Potato Cakes

I'm only giving this 4 stars because, to me, potato cakes need to be cooked in a skillet (which I did)! Otherwise, they were great. I haven't had these since I was a kid: I was in need of some comfort food, and this was it. Ate it with ketchup, just like "way back when". I was going to take a picture, they looked so good, but they got eaten in a flash :)

Albondigas Soup II

I really liked this. The first time I made it as is. The second time I used 1 tsp cumin powder, no seeds, 3 cups chopped cabbage, rather than wedges and added a 1/2 cup frozen corn. It's a very pretty, tasty, spicy soup. Absolutely will make it again. It's perfect for the -20C temperatures were having here!

Traditional Salisbury Steak

We liked this, but found the patties to be a bit bland. I made 4 patties, and doubled the gravy (only 2 servings from 3/4 lb beef was too much meat for us). I would make this again, but definitely would season the patties more! I would add some grated onion to the beef next time, too.

Four Seasons Enchiladas

I was really disappointed with this recipe, especially after reading all of the good reviews. I made the recipe exactly as written. I ate 1 enchilada, my boyfriend ate half of one. I love Mexican, but I didn't like this.

Mom's Prize Winning Raw Apple Cake

This was very good, but we didn't love it. I made it as written. It's quite sweet; I would prefer more apple or spice flavour, rather than 'sweet'. Because it was tender & moist, I might try it again with more spices, maybe as muffins. I should add, I did have 2 requests for the recipe.

Laurie's Shepherd's Pie

This is a good recipe to use as a starting point. I seasoned the meat with seasoning salt, pepper and minced garlic, in addition to the onion. I also tucked some cheddar in under the potatoes. As I made it, I would give it 5 stars.

Rhubarb Sauce I

Yummy! Easy, no-fuss recipe. Thick enough when cool to use as jam on toast. I will make this again, probably with less sugar (the sweet/sour ratio being a matter of personal preference). I will use this method for stewed rhubarb, too: it was 'stewed' at about 7 minutes.

German Chocolate Upside Down Cake

The cake itself was light & tender. I would make it again by itself. The topping was pretty good, too, similar but not the same as actual frosting. Everyone liked it. I was also skeptical about all of the liquid, but I didn't have any spillage!

Stuffed Potatoes

Baking Powder Biscuits

Biscuits so tender they bordered on fragile. I turned the dough over on a floured surface, just 8 times until it would roughly hold together, before patting out the dough, rather than rolling it. I think I would leave out the sugar, unless I was using them for strawberry shortcake (and I think I will!) Will make again. Thanks for the recipe.

Garlic Chicken Pizza

This was pretty good; I liked it better than the chicken pizza that uses ranch dressing for its sauce. I used Classico's Garlic Alfredo pasta sauce: 1/2 cup. I used part cheddar and part mozzarella cheese. I will also try adding some basil and more garlic.
