To Die For Blueberry Muffins

These were easy & enjoyable. My size of muffin tins produced 9, rather than 8. I only made half of the topping as suggested here, which was perfect. The topping is very sweet! I used 1-1/2 cups blueberries. I made 2 batches, oil in one and melted butter in another: both were good. I will definately make these again - next time trying applesauce instead of oil.

Plum Blueberry Upside Down Cake

Very pretty (looks impressive!) & tastes good. The glaze makes the fruit very sweet, but whipped cream/cool whip balanced this out. Overall I was very pleased with this cake & will definately make it again.****2005 I have made this with success again & again. I have to admit, though, I now add 1/2 tsp of cinnamon to the batter.

Chocolate Zucchini Bread I

This was good & moist & well like by some of our family, but not everyone. We had a couple kids suspicious of the green bits! The chocolate taste came mainly from the chips. I think I'll try it again, substituting some cocoa for some flour.

Famous Butter Chicken

I made this because of the great reviews, but I just can't agree with them. It was tender, but rather bland. I might try it again (with a cracker like 'Onion Thins' & some cayenne), because it was very quick & easy!

We really enjoyed this cake. We didn't think the frosting was necessary (we did try it & it was good). I'd serve it plain with some whipped cream on the side. A keeper.

Baked Mushroom Rice

This was good, as a side dish for something with more zing. I added an extra cup of water and lowered the heat to 350 after the first 30 minutes (cooked 20 minutes more), covered the whole time. I'd try it on the stove next time.

Hamburger Potato Casserole

I have to say I made this again, but cheated a little: I didn't feel like peeling spuds, so I used a box of dehydrated scalloped potatoes. I made the sauce as per the box, instead of using the milk from the recipe. The result was pretty good & it was ready in 20 minutes! I also added a couple cups of frozen peas.

Brown Sugar Meatloaf

*Really* sweet. I prefer a spicier meatloaf: I would make the sauce part again, but with my own meatloaf recipe, to balance the sweetness. ~~UPDATE~~I tried the sauce with my own meatloaf, using 1/4 cup brown sugar. It was still too sweet for us.

German Chocolate Upside Down Cake

The cake itself was light & tender. I would make it again by itself. The topping was pretty good, too, similar but not the same as actual frosting. Everyone liked it. I was also skeptical about all of the liquid, but I didn't have any spillage!

Big Soft Ginger Cookies

Very good spice cookie. I didn't have a problem with the dough being too soft. (It's cold & dry around here today, maybe that's why.) I made 3 dozen 2-1/2 inch soft, spicy, hard to resist cookies from this recipe.

Albondigas Soup II

I really liked this. The first time I made it as is. The second time I used 1 tsp cumin powder, no seeds, 3 cups chopped cabbage, rather than wedges and added a 1/2 cup frozen corn. It's a very pretty, tasty, spicy soup. Absolutely will make it again. It's perfect for the -20C temperatures were having here!
