Texas Curried Chicken

Laurie's Shepherd's Pie

This is a good recipe to use as a starting point. I seasoned the meat with seasoning salt, pepper and minced garlic, in addition to the onion. I also tucked some cheddar in under the potatoes. As I made it, I would give it 5 stars.

Blueberry Cookies

Right out of the oven, these tasted like fat little blueberry pancakes (they didn't spread, though). They are more a muffin in texture, than a cookie. If I were to make them again, I'd add more flavouring (more lemon, or some zest, & some vanilla, too) and more blueberries. This recipe made 30 cookies for me.

Spicy Chile Casserole

This was good, but not great. I used cheese flavoured flour tortillas: they weren't mushy, they were like lasagna noodles. I added spices to the sauce; as written was too bland for us. I will make this again, maybe using more tomatoes, or some salsa, and less broth or milk. I think we would like this better with ground beef.

Apple Crisp III

Yummy! I mixed the cinnamon in with the topping, and also used brown & granulated sugars. I used the 1/2 cup water & it wasn't runny. I wonder if the amount of water needed depends on the type of apples used? I used Spartan, as that is what I had.

Ground Beef Curly Noodle

***1/2 We liked this. I did add an onion, garlic & some celery. It's something that if your parents had made it when you were a kid, you'd now think of it as "comfort food": simple to prepare, plain, filling, nothing 'weird'. It's definitely something you can play around with. I will make it again, perhaps with the addition of some salsa & spices cooked in, and some cheese sprinkled on top.

A Marinade To Die For

It wasn't bad, but that might be because it wasn't too flavourful. I used it, as written, for pork kebabs. If I tried it again, I would up the seasonings.

Monterey Chicken with Potatoes

Only ok. It was too oily for me. When I put the chicken in the dish, I poured some of the butter/lime on the potatoes: that was a nice combination. However, I doubt I'll make this again.

Rhubarb Sauce I

Yummy! Easy, no-fuss recipe. Thick enough when cool to use as jam on toast. I will make this again, probably with less sugar (the sweet/sour ratio being a matter of personal preference). I will use this method for stewed rhubarb, too: it was 'stewed' at about 7 minutes.

Chocolate Pinwheels

Really good. I made a double batch, so I just made the recipe twice: one chocolate (2 squares chocolate), one vanilla. I chilled the rolled dough-log overnight. Since I only had unsweetened chocolate, they weren't too sweet, so I sprinkled some white decorator sugar on them before baking. I had 48 1/4"thick, 2-1/2"diameter cookies, baked for 8 minutes. I will make them again.

Really Basic Peanut Butter Cookies

I finally got around to trying these, as I wanted a sweet to go with my cup of tea ;) They were good & I doubt anyone would guess that they were only made with 3 ingredients. They would be a great recipe for kids! I would make them again for a quick snack (maybe add some vanilla), but I will also keep making the 'regular' recipe. I made 27 cookies, baked for 7 minutes. They were puffed & very brown on the bottom. They sank when cool, making soft, stick-to-the-roof-of-your-mouth peanut butter cookies!

Herb Roasted Pork Loin and Potatoes

I had a roast just under 2 lbs. It took 90 minutes to cook. It was moist and tender; both the pork and the potatoes were delicious. I'll make it again, and maybe add some carrots.

Honey-Lime Pork Chops

I marinated these for about 50 hours, unintentionally. By the time I was able to cook them, I forgot all about the sauce. I will try it next time. We enjoyed these: the main taste was lime.

Nana's Apple Crisp

I really liked this. It was like eating a big oatmeal cookie with baked apples! My only deviation from the recipe was to make it in an 8" square pan: I only had 5 little apples. I made the topping as written, since other reviewers had doubled it, but it turned out to be too much topping for us. Next time I would make it in the correct proportions. The only thing I would change from the original recipe would be to not sprinkle the cinnamon on top. I only gave this 4 stars, instead of 5, because my husband didn't like the oatmeal: he said it made "a rough texture". Phht, what does he know?? ;)

Apple Enchilada Dessert

These were good, but it's unlikely I'd make them again. I used homemade apple pie filling, as I don't like canned. We loved the warm caramel sauce on top of ice cream: I would have liked more! The whole thing was _really_ sweet.

Salsa Chicken Burrito Filling

Pretty good. I used this filling to make chimichangas as per the "Shredded Beef Chimichangas" recipe. (I added shredded cheddar into the chimichangas, too.) I will make them again.

Shredded Beef Chimichangas

I didn't give this a star rating, as I used a different filling recipe. I just wanted to say how much we loved the baked chimichanga tortillas. They turned out crispy and flakey. After they finished baking, I brushed some of the browned butter from the pan onto them. Yummy. I'm going to try this will an apple cinnamon filling, too. Thanks!
