Caprese on a Stick

This is one of my favorite summertime salads anyway, but the makeover into a fun appetizer makes it even awesomer (it also apparently makes me invent words like "awesomer." Hehe.) Loved this for the fresh taste, the ease, and the pretty presentation. YUM.

Simply Guacamole

All I did was add a tomato (it was about to go bad and I needed to use it) and lime juice instead of lemon. One word - YUM. Delicious and simple are always nice words to associate with a recipe and this one is a keeper!

Picnic Potato Salad with No Mayonnaise

I chose this specifically for a company picnic my husband was attending. I guess a couple of years ago the entire office ate something bad and all came down with food poisoning, so I was hoping to avoid a similar catastrophe - ha! Anyway, this was super easy and extremely tasty. I used blue cheese this time but I think feta would work, too. I made it the night before and let it sit so by the next day, it was totally ready to go! The basil added a fresh touch that I really liked, also. Everyone loved it, and as of today, no one's called out sick :) Calling it a keeper.

Vegetarian Burrito Casserole

I'll be the first to admit (obviously from my photo) that I didn't make a casserole with this because I was in a hurry and just made regular ole burritos instead of the pie! I did use the veggie crumbles, however, and it was awesome! My jalapeno was, um, kind of gross (coulda sworn it was still good. I was WRONG) so those unfortunately got left out, but the good news is that my husband reacted quite favorably to the veggie crumbles and the meal in general, so this will be making a repeat appearance, hopefully in pie form next time :) Thanks for helping our household wean ourselves off meat!

Jeanie's Falafel

Oh holy moly - my first foray into the world o'falafels and I.am.hooked. My husband and I didn't even allow them to make it into the pitas I bought - we just stood at the stove and ate them plain (although I added some tahini to mine towards the end. Yum.) I followed directions almost exactly, just leaving out the cilantro due to a rather picky, cilantro-hating better half (is he really the better half if he hates cilantro? Hehe.) He immediately informed me that these need to make frequent appearances for dinner and then went to the kitchen to scrounge the leftover crumbs left on the plate. I already want to make them again. Like, tonight, less than 24 hours after my inaugural batch.

Spicy Jalapeno Chicken Sausage with Mango, Pineapple Salsa

My husband (always the skeptic with my new creations) really, REALLY liked this! The only thing I would do differently would be to make my salsa ahead of time to allow it to blend the flavors a bit more (I made my own right before making the recipe.) Also, next time I'll add more jalapeno to it for some more kick (I didn't use the jalapeno chicken sausage, as I couldn't find it. I used plain ole chicken sausage, so there wasn't much heat.) Travis (the skeptic) suggested a squirt of lime juice to freshen it up and it was incredibly good. This is a GREAT summer dish - very filling, but light. I couldn't find black soybeans, so plain ole black beans had to stand in. Overall, easy and good for a nice weeknight meal. And yes, the leftovers are anxiously awaiting my consumption for lunch today. Hehe.

Grilled Chipotle Chorizo Chicken Sausage & Shrimp Kabobs

I think my favorite part of this recipe is DEFINITELY the marinade. Soooo tasty! The pineapple that I thought I had was a bit...past its expiration date...so I used a mango instead. It was awesome! My husband and his friend devoured every bit of it. I was going to serve it with brown rice, but they ate it all before I had a chance to reheat my rice. Yum!

Fiber One® Chocolate-Peanut Butter Haystacks

This are so stinkin' easy, I'm sad I'm just now discovering them! I made them a bit bigger than the recipe indicated, since I was packing them up for a bake sale, and they turned out very nicely. It didn't take long in the fridge for them to solidify, either! I don't have kids, but I imagine this to be a nice go-to recipe for those nights you remember you have to take something to school the next day.

Southwestern Style Fifteen Bean Soup

YUM! I know this passed the test when my hesitant husband completely polished off his bowl and went back for more. I didn't have any bacon, but I DID have some smoked sausage, made the switch, and it was great. I didn't cook the beans overnight, I just soaked them. Really easy and an awesome "cold weather meal" (words of the aforementioned hubby.) This will make an appearance on my dinner table again!

Spicy Turkey Sweet Potato Gumbo

I don't know if I like this soup more for the flavor or the color - it's almost too pretty to eat. *Almost.* Ha. I couldn't find spicy turkey sausage, but I did find regular and it tasted fine. I also used chicken thighs instead of turkey because I wrote down chicken thighs on my grocery list by mistake. Whoops! Anyway, I only added 1/4 cup flour and had plenty. The only other change I made was to use two fresh tomatoes, simply for the fact that they were about to go bad just sitting on my counter. This is a great, comforting soup and I'm just betting it's even better tomorrow. Plus, like I said, it's really pretty! Definitely trying it over rice at work for lunch soon - yum!

Original NESTLE® TOLL HOUSE® Dark Chocolate Chip Cookies

Totally tasty, and I'm not a baker at all! LOVE the dark chocolate chips because I think anything is better with dark chocolate. I just dumped in the whole bag instead of measuring :) I didn't add the nuts and didn't add the extra flour - turned out beautifully. Taking these to a party tonight...but had to taste a few for "quality assurance." Hee hee!

Red Bean Salad with Feta and Peppers

So my sister wound up with a $12 block of feta cheese (it's a long story) and we wanted to use it up before it went bad. A simple ingredient search and this popped up. And it was awesome. We served this at Thanksgiving and wound up doubling the recipe (made 4-5 times dressing, also.) I added just a bit of red vinegar because we were running short of lemon juice, and it tastes amazing. I even took some of my sister's feta (shhh!) so I can make it again once we're out of the leftovers. A nice light salad for whatever type of dinner! I will DEFINITELY make this again.

Creamy Chicken Noodle Soup

This was really good and most of all, EASY! I love that I this resulted in a soup that tasted like it had been cooking all day when I really just threw it together when I got home from work. I did add some onion to it and next time I might add some peas. I also used chicken broth instead of the milk, because, well, I didn't have any milk - ha! Overall I was very pleased with this dish and since it's so quick, it's going in my "rotisserie chicken's on sale and it's raining so we're having soup" file. Thanks!

Beef and Bean Crescent Burritos

I made these vegetarian for a friend coming over. I just left out the beef. Very tasty and she liked them, so it's nice to know I have something to go to when she comes to dinner. I tried them and thought they were pretty dang tasty, too. Very versatile recipe.

Crescent Pizza Pockets

These were better than I thought they were going to be! I couldn't figure out the "folding diagonally" part (I suck at geometry) so I patted all mine out into circles and then folded them up like a fried pie. Whatever shape you use, however, is pretty stinkin' awesome. I want to try it with different "toppings" and see what I can come up with. I just made these for a snack at home, but they'd be handy for a party. Very tasty!

Out of this World Pasta Salad

This was just okay in my book. I modified the veggies to fit our tastes (and what was on sale at the store) so I left out the black olives (olives belong in martinis, in my book.) I couldn't find the alien broccoli, so I used regular broccoli like most of the other reviewers. I think the sauce needs some kick - if I try this again I might take other reviewers' advice and add some dry ranch seasoning to it. Anyway, it was just okay, although my husband seemed to like it.

Aunt Fanny's Squash

What an awesome recipe to use up that boatload of squash your parents give you - ha! I added some cream of mushroom soup and cheese, mainly because I wanted to stretch it out to feed a crowd. I also sprinkled it with paprika when it came out to make it pretty. I reduced the milk a bit, I think, as I was just eyeballing it, but that's what great about this recipe. It's eyballity (it also inspires completely fictional words.) Overall a good recipe - will make again. Thanks!

Zucchini Slaw

I actually used sun-dried tomato vinaigrette (all I had in the cabinet) and loved it! I had some leftover zucchini/squash from a casserole I made, realized I had all the ingredients for this recipe, and was quite pleased with the results! Very easy (always a plus!) and went over quite well. I served it as a "summer supper" with corn on the cob, fresh tomatoes, and some meatballs. I even added some mushrooms to the recipe at the last minute, because they were about to go bad. I'm excited about this one because I feel like it can work with a lot of different ingredients (yet another plus - woot, woot!) so that makes me happy. Very happy, actually. Now. Where DID I put those leftovers? Hee hee.

Oven Baked Zucchini Fries

I just love these! They're really good and just about the only way I can get my husband to eat zucchini. I've made them several times, but this last time I used panko bread crumbs and seasoned them myself. I also used olive oil. Delicious! I dip them in ketchup but my husband likes them in honey mustard. I bet some ranch dressing would be tasty for a dip, too! Great way to eat up all the zucchini my mom is giving me from her garden. And since they're healthier than your normal fries, I'm calling them Bikini Zucchini Fries!
