About this Cook
I grew up on a farm in Tennessee learning how to cook what we grew in the garden. I'm definitely a Southern girl at heart and love Southern cooking. I like to say there isn't a recipe I won't try...unless it involves beets. Ha!
My favorite things to cook
Southern food! You can't go wrong with it when you cook for guests - who doesn't like macaroni and cheese? Plus, i know most of the recipes by heart, so I don't have to drag out a cookbook. It also proves the theory that enough cheese can make anything taste good.
My favorite family cooking traditions
My sister and I get together each Thanksgiving and go absolutely crazy. It wouldn't be Thanksgiving without someone making pink gravy, or potatoes turning black, or completely forgetting the squash in the I suppose I would say "Thanksgiving Mishaps" would be our tradition.
My cooking triumphs
I got my husband to enjoy salmon. Granted, we had just started dating when I made it for him and he HAD to enjoy my salmon, but I'm calling it a "W" anyway.
My cooking tragedies
Well, there were the peanut butter noodles that I made with Worschestershire sauce (note to self: just because soy sauce and Worschestershire sauce come in similarly-shaped bottles does NOT mean they are similarly-flavored.) There is also the blackened catfish that turned out more "blackened" than "catfish." My husband still teases me about that (it even made an appearance in our wedding vows!)

Cold Rice Salad
Love this recipe! We have leftover rice quite a bit and this is a great way to use it and leftover veggies in the fridge for weekday lunches. I fried my eggs and chopped them into the salad and accidentally used more vinegar (misread and added a TBSP instead of a tsp…whoops!) and it was delicious. I could see using water chestnuts in this, also, for crunch. My co-workers were all jealous when I told them what it was and were surprised it wasn't takeout. Will definitely make again.

Slow Cooker Apples with Cinnamon and Brown Sugar
I took a cue from another reviewer and sliced up my apples and layered them on the bottom. Other than that change, I stuck to the recipe. My house totally smells delicious and the vanilla ice cream pairs so well with it! Easy dessert and anything in the slow cooker makes my day…especially when I don't have to CLEAN said slow cooker. Great fall dish - will make again, possibly with dried cranberries next time!

Tomato and Bacon Creamed Corn Casserole
This recipe is perfect for putting on the counter while you're watching football on Sundays (and tastes good even if your team loses!) We don't eat a lot of meat so I left out the bacon. To give it a bit more "oomph" however, I added in some squash to give it some more substance. My tomatoes were done for the season so I didn't' get to top it with those but my husband loved it and ate it with a grilled cheese sandwich for a twist of soup and sandwich. It made the house smell lovely and of course anything in the slow cooker makes me happy. Great fall (or anytime really) recipe! Also, since it's just the two of use, I halved the recipe and had plenty for leftover lunches. Yum!
