Sweet Potato Pecan Waffles with Praline Peaches

I just made these and the whole family enjoyed them. I had a yam I needed to use so I just steamed it and added a bit of the water and about a tsp of sugar rather than using a can of sweet potatoes. I also added a bit of vanilla. These had a nice flavor to them- you could taste the yam but in a good way. They were quite fluffy but filling and the peach topping was a nice way to finish them off.

Chickpea and Quinoa Salad with Lemon and Tahini

This is a good base for a quinoa salad. The flavors of the dressing are nice. Great with added veggies like tomato, cucumber, grated carrot. I just used a can of chickpeas since I didn't have time to cook them and this whipped up in just 15 minutes (prepared everything else while cooking the quinoa and ate it warm).

Easy Chicken and Broccoli Casserole

I needed to use up some leftover rice and this hit the spot! I replaced one can of condensed chicken soup with coconut milk which tasted great with the hint of curry.

yummy but Way less spice (maybe 2 tsp chili powder). Don't add any salt. Pureed beans was a good way to get more fiber in there.

Sausage-Broccoli Puff Pancake

Pretty tasty. The "pancake" was like yorkshire pudding and therefore very fatty. Next time I'll cut the butter in half. I also used whole wheat flour and it turned out fine. Used diced chicken since I didn't have sausage, and didn't have instant rice so used microwave since I didn't have time to cook regular. Sprinkled the cheese on top. Steamed the broccoli to spead up the cook time.
