Beef and Bean Chimichangas

Really tasty and easy! I made the filling the night before (saves time on a busy weeknight) and just baked them as we needed. Also great to use for taco salad... Thanks for the fantastic recipe!

Chicken Stir-Fry

Very tasty, simple and healthy! We like lots of veggies, so I added mushrooms and snow peas along with bamboo shoots and water chestnuts. I also doubled the sauce and added about 1 TBSP of brown sugar (per other reviewers' suggestions). The 1 cup of chicken broth may have been too much - I had to add a corn starch slurry to get it to thicken, so maybe next time I'll cut back on the liquid. Overall, great easy recipes - thanks!

Spicy Sweet Potato and Coconut Soup

Louisiana Sweet Potato Pancakes

Brown Sugar Meatloaf

The only things I changed in this recipe was the amount of onion (a whole onion seemed a bit much to me), double the sauce, and instead of saltine crackers I used bread crumbs. It was really out-of-this-world good! I've never had much success with meatloaf - I can never get it done in the middle and then wind up baking it for too long as I try. So for this one, I scooped a little sauce in the bottom of my muffin pans and put the meatloaf mixture in that to bake. I was concerned about the grease not draining out, so I formed little "wells" in the middle of the meat and scooped the grease out when it was done. It took about 30 minutes to bake; I took them out and put more sauce on top for the last few minutes. Everyone loved the result!

Jen's Heavenly Egg Salad

This was good, but not fantastic. Even with only using a tsp. of lemon juice, I thought it was a little too runny. I did add chopped sweet red peppers, a little dill, and celery seed since I didn't have any celery to use in it. Next time I will make sure to have fresh celery on hand and maybe a few more eggs so it's not so runny.

Tacos in Pasta Shells

My husband and I both loved this - very quick and easy for a weekday meal. I used taco seasoning instead of the chili powder and chunky salsa instead of the taco sauce - we don't like cilantro so I omitted that too. Topped with sour cream, black olives, and cheese - very tasty!

Pork Chops with Raspberry Sauce

This was really good! We had the leftover chops the next day over a salad and used the raspberry sauce as a dressing - definitely the thing to do with these leftovers! Next time I will reduce the sauce more and maybe add a little less vinegar - it was a little runnier than I expected and I wanted a little sweeter taste.

Oatmeal Praline Cake

Tuna Lime Tostadas

Oatmeal Pancakes II

I substituted brown sugar for white and omitted one TBSP of oil - we didn't miss that at all! Like other reviewers, I recommend letting the oatmeal soak while you're preparing the rest. Great flavor and perfect with a fresh fruit topping!

Rosemary Turkey Meatloaf

The flavor was good, but the vinegar was very strong. My husband didn't seem to notice, but it was overpowering to me. I think next time I'll cut it back quite a bit and make more sauce - the sauce was really great!
