Banana Crumb Muffins

My husband and I agreed that this is the best banana muffin recipe we've had! I did make a few changes: used 4 over-ripe bananas (instead of 3), 1/2 cup packed brown sugar + 1/4 cup white (instead of 3/4 cup white), added 1 tsp vanilla and 1 tsp cinnamon to the batter along with some pecan pieces, and increased the cinnamon in the streusel topping to 1/4 tsp. AMAZING!

Restaurant-Style Hashbrown Casserole

I made this for ny husband and a group of teenage boys - they loved it! The only thing I added was some ground beef (would have been better with sausage, but some of the boys didn't eat pork) and they gobbled it up.

Chicken Massaman Curry

This was really, really good! I added some carrots, just to have a little more veggie in it, but honestly it didn't do anything for the flavor, so I don't know that I'd do that again. Our favorite Thai restaurant makes this minus the potato and serves the sauce over slices of chicken and avocado with cashews sprinkled on top - next time I will try to do it that way - the flavor of the sauce is so incredible!

Orange Pecan French Toast

Really awesome flavor! I couldn't fit 12 pieces of french bread in my dish, so I cubed the bread. It worked great, but next time I will double the brown sugar/pecan mixture on the bottom and maybe up the liquid mixture by half to really soak all the pieces - there were some spots near the top that didn't get enough of that flavor. Definitely add more cinnamon and orange peel too.

Andrea's Pasta Fagioli

Excellent flavor! I did make some changes, some per other reviewers and some just for my family's taste. I browned 1 lb. ground beef with the onion and garlic, drained the grease, then added 2 cans tomato sauce, one can of Italian diced tomatoes, 1/2 can stewed tomatoes (because I had it left over from another recipe), the beans, 3 large carrots (sliced), and all the spices except the salt. I simmered this for about 40 minutes, then added the ditalini pasta and let that cook for another 20. My only thought is that the pasta soaked up almost all the liquid, even with the extra cans of tomatoes. I think next time I will only use 1/2 pound of pasta so we have a little more of the yummy sauce to enjoy. I know the changes may not be exactly authentic, but they sure are yummy and we like a hearty soup at my house.

Cajun Crawfish and Shrimp Etouffe

I really wanted to LOVE this, and was a bit disappointed. The dish lacked a depth of flavor that I expect in Cajun food. I think next time I will use butter instead of the oil and mess with the roux and spices a bit. I think this has great potential!
