White Cake Frosting II

FABULOUS!! I made two white 8" round cakes and topped one with this delicious frosting and angel flake coconut. It looked so beautiful! On the other one, I used a little red food coloring to make a strawberry cake with pink frosting. I decorated it with fresh strawberries. This frosting is so versatile; goes on smoothly and is so fluffy! My husband and grandkids loved their cakes! Will definitely be using this recipe again!

Ultimate Shrimp Scampi

Loved it! I could not find asiago cheese so I added some parmesan and the avocados. I added about 1/8 cup wine but be sure to cook the sauce as called for so the shrimp will not take on the strong wine/lemon juice flavor. This makes a pretty presentation. It is simple but elegant. Will make again for sure!

Pineapple Casserole Dessert

I have made this three times this month already! My son was home from college and I packed him some goodies, including some of this dessert. He called me specifically to tell me how good this was. I do cut back on the sugar and butter some, cuz it just seems like so much. I also tried a baguette of french bread as another reviewer suggested. Delicious! I have not tried it with the cheese as it just doesn't seem to need it. This is a treat for sure!

Apricot and Peach Fried Pies

Fabulous! I have made these a few times now and they are still the best. I made the dough with butter flavored shortening cuz that's what I had on hand. A friend gave us fresh peaches from their tree and I wanted to use them up. I made the filling using sugar and large chunks of the peeled peaches. I did have to add cornstarch to thicken the mixture. I let the filling cool completely before adding it to the pasty. I made sure to flute the edges well. Absolutely delicious!

Gooey Chocolate Icing

I didn't have confectioners sugar to frost my yellow bundt cake but I did have a can of fat-free sweetened condensed milk so I decided to use what I had on hand. I also did not have chocolate squares so I used 1/4 cup of unsweetened cocoa. I mixed this together and cooked in a double boiler. I did add 1 tbsp of butter to the mixture and cooked until it was thick (probably 30 minutes or so and stirred often so it wouldn't burn). I did not add water. This is a FABULOUS icing over a bundt cake. The chocolate icing was not too sweet which we liked and it looked so pretty. Drizzle the icing over a cooled cake while still warm as my icing was pretty thick. I will definitely make this icing again!

Gingered Flank Steak

Delicious!! My flank steak started marinating Wednesday around noon, the day before Thanksgiving, as I intended to serve this for dinner Wednesday night. HOWEVER, with all the hustle-bustle and guests coming and going, I did not get to make this until SATURDAY evening. The flavor was mild and smooth without being overpowering...the meat was incredibly tender and moist. I pan seared my meat and then cut it into slices for fajitas. Because we like jalapenos, I sliced some along with onions and added it to the meat after it had cooked just a bit and served with tortillas. My husband was so tired of turkey that this was a very nice change. The flavor was wonderful! Thank you for a very nice recipe which I will make again!

Raisin Sweet Potato Bread

Absolutely the best raisin sweet potato bread! I also added a half cup of walnuts and maybe a quarter more cup of cooked sweet potatoes. Baked for 60 minutes. Love the moistness and flavor. Will make this again for Christmas and add cranberries!

Broccoli Casserole

Wonderful dish! I had one can cream of mushroom and one can cream of celery so I used them both. I also steamed my rice and had leftover chicken which I shredded and added. Used frozen broccoli florets and they were great. Instead of the processed cheese, I also used grated cheddar cheese. Mixed it altogether and added garlic powder, pepper and salt. Delicious!

Irene's Barbeque Sauce

Fantastic! I also doubled the recipe so I could have sauce for turkey meatballs later in the week. I poured the sauce over a large pkg of chicken drumettes and baked in the oven until the chicken was done. I did not add the 1/4 cup vegetable oil to the sauce and didn't think it needed it. I also went lighter on the vinegar as recommended by others. I used brown, spicy mustard that I had on hand. We had mashed potatoes and cole slaw with this marvelous meal. This was great Irene. Out of this World Turkey Brine

This is my first time brining a turkey. The turkey was delicious, moist and juicy! I had a 25 lb. fresh turkey and when baking, I added onions, celery and garlic. The whole house smelled fabulous and Big Tom served his purpose well! Great recipe!

Chunky Apple Bread

Very, very good! Excellent after-school snack with milk or with a cup of coffee. I had apples in the frig and decided to try this recipe. I didn't have raisins but added another apple as a reader suggested. The fragrance of the bread baking is wonderful!

Mexican Pork Chops

DELICIOSO!! I hesitated a little before making this dish because, frankly, the ingredients just didn't sound good together! After reading the reviews, I decided to try it. Several of you had suggested substituting ROTEL and adding taco seasoning to the pork chops. Wonderful idea! I love rice so I also added 1 cup instead of 1/2 cup and simmered it on the stove instead of baking. I did not have beans so I didn't worry about that. I bet the leftovers tomorrow will be even better. THANKS A BUNCH!

Marinated Chuck Roast

Fabulous flavor! I doubled the marinade as I had a larger piece of meat. I marinated it for around 14 hours. My husband loved it! The meat was very flavorful and browned nicely. Next time, I would like to add a little brown sugar to change the flavor and make it more like a BBQ sauce, but I will definitely use this recipe again!

Whoopie Pies VIII

WOW! What an incredible dessert! The only thing I didn't do was add the egg whites at the end cuz my filling was already fluffy and thick. I really didn't want to mess it up! I used dark cocoa for this recipe. The cake part was so rich. This recipe will so enhance my reputation! Thank you for this awesome recipe.

Crustless Cheese Quiche

YUM YUM YUM!!! I didn't feel like going to the grocery store to get meat for dinner but did have the following ingredients on hand which I added to my quiche: chopped onion, spinach, small diced potato, chopped serrano chiles (we like things spicy), cilantro, and I did add two more eggs. I sauteed the onions in a little of the bacon drippings and did not add butter as others had recommended. I also added a sprinkle of baking powder as someone recommended. I had a Mexican blend cheese which I also added. DELICIOUS! I will definitely make this quiche again with other variations! We did not miss the crust at all. This would be a wonderful brunch or breakfast item, too. Thank you, thank you!

Cocktail Meatballs I

Absolutely delicious! Loved the sauce. I didn't quite have enough ketchup, so I also added some salsa to the mixture(1/4 cup). I also chopped up sweet onions instead of minced onions which added a great flavor. One of the reviewers recommeded adding cornstarch so the sauce could be thick and I am so glad I did! Next time I make these, I will also double the recipe (especially the sauce) to make meatball sandwiches afterwards. Great idea! Thank you!

Green Grape Salad

My family loves this recipe using low fat cream cheese and low fat sour cream! I do bring the cream cheese to room temperature so it is creamy when everything is mixed. I think I added more of both sugars bcuz I had sour green grapes but the purple grapes I added were such a nice complement as another reviewer suggested. This is a wonderful and quick dessert. Thank you!

Homemade Flour Tortillas

OK ladies, here goes...I did not intentionally want to sub ingredients, but I did not have shortening, lard, or even margarine or butter! I really wanted to make these so I subbed what I had on hand....COCONUT OIL! I did put in the freezer to harden for a bit so it would not be soft or oily. It took just a little more mixing with my fingers to break it down, but my husband who is (very) Mexican could not tell the difference. There really was no difference in taste and I actually liked the taste better. The only thing I would do next time is add just a tad more salt. My tortillas were soft, pliable and easy to handle. I did use 1/2 CUP of the coconut oil because that is usually what I add when I have made tortillas before. I also sprinkle flour on my acrylic cutting board where I make tortillas so they will not stick. This is THE BEST recipe for homemade flour tortillas that I have found and better than my previous recipe. I will be making this recipe again and again (with my coconut oil sub I believe). Berdean's Cube Steak

PERFECT!! I read all the wonderful reviews and was still somewht unconvinced that so many could be so right!! I'm a believer! This recipe will become a staple in my dinner repertoire. Followed the recipe but was wondering what to do with all the oil after frying the meat. I did take some of it out cuz it just seemed to be alot to leave in. I had some leftover beef broth from another recipe and wanted to use it up so I added that along with a sliced onion as others recommended. I also added garlic powder to the flour before dredging the meat. To the cold beef broth, however, I did add the remaining flour from dredging the meat and used the wire whisk to remove the lumps. I added this roux to the meat and onions. The smell was scrumptious and the meat was amazingly tender. The onion gravy was fabulous. I have already forwarded this recipe to my sisters! Thank you for a great recipe!
