Fluffy Pancakes

Reviewed: Nov. 14, 2009
Our grandchildren always request pancakes on Saturday morning after spending the night. They helped me make these fluffy, delicious pancakes. We added vanilla and cinnamon to the mix. We made both chocolate chip and blueberry pancakes. These pancakes are light, fluffy and delicious even without the syrup! Made these again but used whole wheat flour. Still delicious!

Bacon Chicken and Dumplings

Reviewed: Oct. 26, 2009
I am going to say there is no way to mess up this delicious recipe considering what I did to it! My husband had been asking for chicken and dumplings for a while. I had intended to go to the grocery store to get the items I needed but when I woke up, we were under a severe thunderstorm watch. I decided to improvise. First, I didn't have bacon so I sauteed the onions in 1 tablespoon butter-flavored shortening. I also chopped up celery, garlic and a carrot. If you can imagine this, I didn't have any milk or half and half either! I did have some powered milk on hand and used that along with 2 cans of cream of chicken soup and a can of whole kernel corn. I boiled a whole chicken and used some of the chicken stock from that after straining out the fat. After deboning the chicken, I added poultry seasoning, pepper, parsley and a little cumin as another reader suggested. I didn't feel like making the dumplings so I cut up pieces of a refrigerated can of biscuits I had on hand. This was quick, delicious and made a beautiful presentation with plenty of soup. I will definitely try this recipe the next time as posted. Thank you for a fabulous recipe!

Peanut Butter Pie I

Reviewed: Oct. 18, 2009
Great job Stephanie! I also needed a dessert for the church's annual Jamaica cake walk. I didn't want to go to the store to get ingredients for another dssert I had planned on making so I scrounged around to see what I had on hand. I had a graham cracker crust and used that. I had some pure peanut butter without added sugar or other additives so I used what I had on hand. The whippng cream gave it richness without being too sweet. It was fast and easy. I added milk chocolate chips on top to give it a little extra look. yum. I will definitely make this again.

Chocolate Mayo Cake

Reviewed: Mar. 29, 2009
Enjoyed this cake! I added pecans to the batter from my mother-in-laws trees and it was delicious with a dollop of fat-free whipped topping. It rose nicely....good recipe. No need for a boxed chocolate mix.

Whoopie Pies VIII

Reviewed: Mar. 14, 2009
WOW! What an incredible dessert! The only thing I didn't do was add the egg whites at the end cuz my filling was already fluffy and thick. I really didn't want to mess it up! I used dark cocoa for this recipe. The cake part was so rich. This recipe will so enhance my reputation! Thank you for this awesome recipe.

Pineapple Casserole Dessert

Reviewed: Mar. 6, 2009
I have made this three times this month already! My son was home from college and I packed him some goodies, including some of this dessert. He called me specifically to tell me how good this was. I do cut back on the sugar and butter some, cuz it just seems like so much. I also tried a baguette of french bread as another reviewer suggested. Delicious! I have not tried it with the cheese as it just doesn't seem to need it. This is a treat for sure!

Oatmeal Raisin Cookies IV

Reviewed: Dec. 14, 2008
This is a gourmet cookie! I went with some of the other reviewers' suggestions and added a tsp. of baking soda and baking powder and 1/2 tsp salt. The reviewer who mentioned checking the expiration on the baking soda was right on! Even though I do alot of baking, my baking soda was expired. I even added chocolate chips and baked at 375 instead of 350. I made these cookies larger and watched them until they were ready to take out of the oven. It's important to let them cool before handling so they won't crumble. Thank you for a great recipe!

Beer Pancakes

Reviewed: Dec. 9, 2008
WOW!! The lightest and fluffiest pancakes. My granddaughter was home sick today, but of course, wanted pancakes for breakfast. I didn't have pancake mix so I tried this recipe with Root Beer. I didn't feel like melting butter, so I added vegetable oil, a little vanilla and cinnamon. Next time, however, I think I will decrease the sugar somewhat. My granddaughter asked me to PLEASE make some for her little brother after school. My grandchildren love my pancakes, but they asked me to ALWAYS make these.

Key Lime Pie VII

Reviewed: Dec. 5, 2008
Fabulous pie! This is really pretty quick and simple to make. I added a few drops of green food coloring and because I had a frozen pie crust I had made a few weeks earlier, I baked the pie crust and after it cooled, added the key lime mixture. It was so good, it didn't even need whipped topping, but was excellent with a dollop. I also used Mexican limes which were available at the grocery store and are a little larger than key limes. They were very juicy and was quicker to get the 3/4 cup of lime juice. I couldn't tell the difference in taste.

Gingered Flank Steak

Reviewed: Nov. 29, 2008
Delicious!! My flank steak started marinating Wednesday around noon, the day before Thanksgiving, as I intended to serve this for dinner Wednesday night. HOWEVER, with all the hustle-bustle and guests coming and going, I did not get to make this until SATURDAY evening. The flavor was mild and smooth without being overpowering...the meat was incredibly tender and moist. I pan seared my meat and then cut it into slices for fajitas. Because we like jalapenos, I sliced some along with onions and added it to the meat after it had cooked just a bit and served with tortillas. My husband was so tired of turkey that this was a very nice change. The flavor was wonderful! Thank you for a very nice recipe which I will make again!

Broccoli Casserole

Reviewed: Nov. 19, 2008
Wonderful dish! I had one can cream of mushroom and one can cream of celery so I used them both. I also steamed my rice and had leftover chicken which I shredded and added. Used frozen broccoli florets and they were great. Instead of the processed cheese, I also used grated cheddar cheese. Mixed it altogether and added garlic powder, pepper and salt. Delicious!

Chunky Apple Bread

Reviewed: Sep. 4, 2008
Very, very good! Excellent after-school snack with milk or with a cup of coffee. I had apples in the frig and decided to try this recipe. I didn't have raisins but added another apple as a reader suggested. The fragrance of the bread baking is wonderful!

Apricot and Peach Fried Pies

Reviewed: Aug. 17, 2008
Fabulous! I have made these a few times now and they are still the best. I made the dough with butter flavored shortening cuz that's what I had on hand. A friend gave us fresh peaches from their tree and I wanted to use them up. I made the filling using sugar and large chunks of the peeled peaches. I did have to add cornstarch to thicken the mixture. I let the filling cool completely before adding it to the pasty. I made sure to flute the edges well. Absolutely delicious!

Beef Stew IV

Reviewed: Aug. 12, 2008
Delicious! What a wonderful recipe! I could have eaten the veggies and broth without the meat! I used all the ingredients in this recipe but as sugested by others, I also added another bay leaf, added a little thyme and rosemary. I used beef broth but did add one cup of water. While all my ingredients were simmering, I also added a chopped jalapeno to give it a kick. I added peas and carrots at the end. I will definitely make this again!

Extreme Banana Nut Bread 'EBNB'

Reviewed: Jul. 29, 2008
This is the BEST banana bread recipe I have ever made. EXCELLENT! The house smelled so good with this bread baking! I was not a huge fan of Banana Nut Bread, but I had ripe bananas and did not want to throw them out. I will definitely make this bread again. The texture is wonderful. I followed other readers advice and added cinnamon, vanilla and baking powder and reduced the oven temperature to 325 which was a good thing as my bread baked in less than an hour. I can't wait to make this again!

Homemade Banana Pudding Pie

Reviewed: Jun. 26, 2008
WOW! How can I ever go back to pudding in a box! I'm glad I read the reviews b/c it helped tremendously! I used 1 1/2 CUPS SUGAR as called for BUT DOUBLED THE RECIPE as someone suggested. I also cooked in a double-boiler, saved one-half of the pudding and added a square of Baker's semi-sweet chocolate to make a chocolate pie. As the pudding was cooking for a while, I realized it wasn't thickening as much as I would have liked. I added about 1 tablespoon of cornstarch and whisked it. It started to thicken nicely at this point. My meringue turned out beautifully. This was worth the time and effort to end up with TWO different pies! Thank you for a wonderful recipe. I will make it again for sure!

Ultimate Shrimp Scampi

Reviewed: Jun. 23, 2008
Loved it! I could not find asiago cheese so I added some parmesan and the avocados. I added about 1/8 cup wine but be sure to cook the sauce as called for so the shrimp will not take on the strong wine/lemon juice flavor. This makes a pretty presentation. It is simple but elegant. Will make again for sure!

Crustless Cheese Quiche

Reviewed: Jun. 13, 2008
YUM YUM YUM!!! I didn't feel like going to the grocery store to get meat for dinner but did have the following ingredients on hand which I added to my quiche: chopped onion, spinach, small diced potato, chopped serrano chiles (we like things spicy), cilantro, and I did add two more eggs. I sauteed the onions in a little of the bacon drippings and did not add butter as others had recommended. I also added a sprinkle of baking powder as someone recommended. I had a Mexican blend cheese which I also added. DELICIOUS! I will definitely make this quiche again with other variations! We did not miss the crust at all. This would be a wonderful brunch or breakfast item, too. Thank you, thank you!
