Janet's Rich Banana Bread

DELICIOUS! Totally agree with other reviewers. I had to double this recipe because I knew that based on the reviews, it would be wonderful. However, I did not have sour cream so I substituted 1 cup evaporated milk with 1 tablespoon white vinegar (for 2 loaves). I also took another reviewer's suggestion to add another 1/4 cup of flour (1/2 cup for two loaves) but I only added a total of 1 tsp baking soda and 1 tsp baking powder to make my two loaves. I used 4 nice sized bananas, but could have easily added another one. Overall, this is a GREAT recipe and I will be making it again. So HAPPY I doubled the recipe! Thank you for a great recipe!

Green Grape Salad

My family loves this recipe using low fat cream cheese and low fat sour cream! I do bring the cream cheese to room temperature so it is creamy when everything is mixed. I think I added more of both sugars bcuz I had sour green grapes but the purple grapes I added were such a nice complement as another reviewer suggested. This is a wonderful and quick dessert. Thank you!

Homemade Flour Tortillas

OK ladies, here goes...I did not intentionally want to sub ingredients, but I did not have shortening, lard, or even margarine or butter! I really wanted to make these so I subbed what I had on hand....COCONUT OIL! I did put in the freezer to harden for a bit so it would not be soft or oily. It took just a little more mixing with my fingers to break it down, but my husband who is (very) Mexican could not tell the difference. There really was no difference in taste and I actually liked the taste better. The only thing I would do next time is add just a tad more salt. My tortillas were soft, pliable and easy to handle. I did use 1/2 CUP of the coconut oil because that is usually what I add when I have made tortillas before. I also sprinkle flour on my acrylic cutting board where I make tortillas so they will not stick. This is THE BEST recipe for homemade flour tortillas that I have found and better than my previous recipe. I will be making this recipe again and again (with my coconut oil sub I believe). Wonderfully delicious! I have tried other recipes from this site and I believe I have found my favorite recipe. After reading another reviewers comment about being too salty, I only added 1/2 tsp and they were great. Thank you, thank you!

Buttermilk Coleslaw

Just made this coleslaw recipe to go along with fried catfish. Delicious! I like the idea of adding a little hot sauce for some "zing" to the coleslaw and next time I will but it was excellent as is. I cut the recipe in half for the 3 of us and there was plenty of dressing left over to make more tomorrow. Thanks!

Unbelievable Rolls

The magic of yeast and flour (and sugar)! I will repeat what many reviewers mentioned about the lightness, fluffyness, and flavor. I used butter instead of margarine and coated my baking pan with butter. These rolls were fabulous! I also needed to add at least 1 1/2 cups of additional flour to the final kneading process due to the stickiness and the dough was still somewhat sticky, but this must be the secret as others have said. I doubled my recipe because I wanted to freeze some rolls. It was harder to work with so much dough and I kept running out of baking trays, but believe me, it was worth it. With so much dough, I made my rolls BIG! This is a wonderful recipe and there is no need to look elsewhere. I will be making these again. Thank you Sherlie for sharing this with us!

Berdean's Cube Steak

PERFECT!! I read all the wonderful reviews and was still somewht unconvinced that so many could be so right!! I'm a believer! This recipe will become a staple in my dinner repertoire. Followed the recipe but was wondering what to do with all the oil after frying the meat. I did take some of it out cuz it just seemed to be alot to leave in. I had some leftover beef broth from another recipe and wanted to use it up so I added that along with a sliced onion as others recommended. I also added garlic powder to the flour before dredging the meat. To the cold beef broth, however, I did add the remaining flour from dredging the meat and used the wire whisk to remove the lumps. I added this roux to the meat and onions. The smell was scrumptious and the meat was amazingly tender. The onion gravy was fabulous. I have already forwarded this recipe to my sisters! Thank you for a great recipe!

No Kneading Dinner Rolls

WOW! WOW! WOW! I used this recipe to make cinnamon rolls AND I have been making cinnamon rolls for over 30 years. This has to be the best recipe ever. Either that or God was good to me today and everything turned our perfectly! The rolls were light and so, so tasty! I added cinnamon water to the mix along with nuts, raisins, butter and the cinnamon/sugar mix before I rolled & cut the dough. Can't wait to try this for dinner rolls. Shannon, you are awesome!

The Humble Shepherd

This is definitely a meat & potatoes meal! I used the turkey but because I had Italian sausage I needed to use, I added it to the turkey. I also added a can of corn, can of peas and chopped up two fresh carrots cuz I didn't have frozen. I threw in 4 garlic cloves and the worchestire sauce as recommended by others. Instead of the chicken gravy mix, I had brown gravy mix I needed to use, so I did. I did not add any butter or milk to the mashed potatoes but added fat free cream cheese for creamy mashed potatoes. I topped off this meal with fat free cheese. This was very good and hearty. Just a tad high on the sodium content.

Jumbo Fluffy Walnut Apple Muffins

Absolutely Delicious! Light and airy. I did not add the struesel to cut down on some of the decadent calories and they were still delicious! I also only used 1 cup sugar and they were still delicious! What a great recipe to use up some of the apples I had on hand!

Irene's Barbeque Sauce

Fantastic! I also doubled the recipe so I could have sauce for turkey meatballs later in the week. I poured the sauce over a large pkg of chicken drumettes and baked in the oven until the chicken was done. I did not add the 1/4 cup vegetable oil to the sauce and didn't think it needed it. I also went lighter on the vinegar as recommended by others. I used brown, spicy mustard that I had on hand. We had mashed potatoes and cole slaw with this marvelous meal. This was great Irene. Gooey Chocolate Icing

I didn't have confectioners sugar to frost my yellow bundt cake but I did have a can of fat-free sweetened condensed milk so I decided to use what I had on hand. I also did not have chocolate squares so I used 1/4 cup of unsweetened cocoa. I mixed this together and cooked in a double boiler. I did add 1 tbsp of butter to the mixture and cooked until it was thick (probably 30 minutes or so and stirred often so it wouldn't burn). I did not add water. This is a FABULOUS icing over a bundt cake. The chocolate icing was not too sweet which we liked and it looked so pretty. Drizzle the icing over a cooled cake while still warm as my icing was pretty thick. I will definitely make this icing again!

Marinated Chuck Roast

Fabulous flavor! I doubled the marinade as I had a larger piece of meat. I marinated it for around 14 hours. My husband loved it! The meat was very flavorful and browned nicely. Next time, I would like to add a little brown sugar to change the flavor and make it more like a BBQ sauce, but I will definitely use this recipe again!

Million Dollar Cake

Don't you just hate when someone changes your recipe, but in an effort to cook/bake more lowfat/sugar free this year, here are the changes I made. Baked the yellow cake mix as called for including the butter. (Could have used applesauce instead of butter to really make this low calorie.) For the topping, used lowfat cream cheese, DID NOT add confectioners sugar, added the crushed pineapple with juice, added package lowfat, sugar free vanilla pudding mix and a container of lowfat frozen whipped topping. Baked in a 9 x 13 inch pan. The cake was very good and moist and, surprisingly, my picky husband did not even notice these changes! This cake has lots of wonderful flavors with the oranges and pineapple. I will make this again!

There was nothing bland about this delicious dish! I followed the recipe but in addition, added three chopped jalapenos, four chopped roma tomatoes, three garlic cloves and two pork chops that were sitting in the refrigerator. I used two cups of rice instead of three. I was cooking this New Year's Eve and it smelled so good, my husband and I had a bowl for dinner!

Out of this World Turkey Brine

This is my first time brining a turkey. The turkey was delicious, moist and juicy! I had a 25 lb. fresh turkey and when baking, I added onions, celery and garlic. The whole house smelled fabulous and Big Tom served his purpose well! Great recipe!

YUM, YUM! What a difference in taste homemade applesauce makes! Had planned to add extra apples but found one rotten apple which had to be thrown out. While the apples were cooking, kinda eyeballed it and decided to take out some of the liquid. I'm glad I did. Should never have to buy applesauce again with this wonderful recipe.

Cola Cake

Super fabulous! I was out of eggs, oil and milk. I did not have a chocolate cake mix but used a yellow cake mix and added 1/2 cup of unsweetened Hershey's cocoa. I also added semi-sweet chocolate chips which I had on hand. Amazing flavor and moistness. Didn't even feel the need to frost this cake after adding the chocolate chips. Easy, fast and delicious!

Raisin Sweet Potato Bread

Absolutely the best raisin sweet potato bread! I also added a half cup of walnuts and maybe a quarter more cup of cooked sweet potatoes. Baked for 60 minutes. Love the moistness and flavor. Will make this again for Christmas and add cranberries!
