Brown Rice and Black Bean Casserole

Wonderful recipe, although the flavors are pretty bland, so I've been experimenting with ways to spice it up a bit. Still bland, but still good! Modifications tried so far: fresh jalapeƱos, cilantro, grill the chicken, grill the veggies, 2% Mexican cheese blend instead of swiss. I've never added the carrots, and as I've upped the jalapeƱos, I've omitted the cayenne. I always use more rice than called for. Bottom line: inexpensive and healthy dinner option.

Catherine's Spicy Chicken Soup

Wonderful recipe. I modified based on prior reviews to make it a clean recipe. Halved it and it still made a lot. I used 4 frozen grilled chicken breasts and about 8 oz frozen grilled salsa which we always keep on hand. Started with the onions and garlic per the recipe, added 2.5 cups of boiled water with 3 chicken bullion cubes dissolved (microwave), salsa, 1 can petite diced tomatoes, 1 can fire roasted diced tomatoes, 1 can corn, 1 can black beans, and 1/2 can condensed tomato soup. Then added the spices used in the chicken broth, also halved. Once it was combined well, I added the frozen chicken breasts and let it simmer covered on the stove for about 30 minutes. Then I took out the chicken breasts, shredded them and added them back to the pot and let it cook about 5-10 minutes more. Wonderful!

Penne with Chicken and Asparagus

I wouldn't change a thing, although I will make my 11 year-old son eat it when it's done instead of an hour later when it all tastes like asparagus.

Tater Tot Casserole

Great flavor, loved by the whole family. Keeping the tater tots on top during cooking keeps them from getting mushy; I've tried it both ways and keeping them on top is my preferred method.

Received rave reviews from entire family (including 2 picky eaters), easy to make, and leftovers to boot! Didn't change a thing - used Bertoli jarred marinara sauce and fresh Parmesan on top.

Mashed Potato Salad

This is exactly what I was looking for! I would describe the flavor as very similar to the filling that goes into deviled eggs (w/o the yolks, of course). My husband, who does not like "salads," even tried it and liked it. That says a lot!
