Whipped Cream Icing I

Reviewed: Jul. 16, 2011
I am not a beginner when it comes to baking or making frosting or icing, but apparently I have no clue how to use gelatin. I ended up picking out the gelatin chunks and frosted my cake with the whipped cream. Like others have suggested, there should be some clarification on how to do the gelatin for those of us who have never used it. The gelatin was nice and smooth and after whipping it into the cream it was just stringy and didn't blend. I'm sure it is my fault, but I can't find one recipe online that explains how to do this properly.

Slider-Style Mini Burgers

Reviewed: May 7, 2010
I absolutely love these! The first time I made them I only made 1/2 the recipe (using ground turkey) and 1/2 pkg. of onion soup mix. Didn't use mayo (personal preference) and used a colby/monterey jack cheese blend. They were excellent, especially the next day, but I felt it was missing something in the cheese taste. So the next time I made them, I made the whole amount and used ground turkey, 1.5 pkg of onion soup mix, again no mayo, and about 1 1/4 cup of cheddar/mozzarella cheese blend to get it to stick together. Then after spreading it onto the rolls, I lined 6 slices of american cheese on top before placing the roll tops back on (6 slices fit almost perfectly on the buns). They were even better with american cheese and I don't normally like american cheese. Love these!

BBQ Chicken Pizza I

Reviewed: Mar. 12, 2010
This was fantastic! I made Jay's Signature Pizza Crust for this. Didn't use cilantro or Gouda. I added diced bacon (like they do at Papa John's) and used Sweet Baby Ray's Honey BBQ sauce and a pizza cheese blend. I baked chicken tenders in foil sprinkled with Grill Mates Mesquite seasoning, then diced the chicken and simmered in the sauce while I waited for the pizza dough to rise. This was seriously the best BBQ chicken pizza I have ever had!

Hamburger Vegetable Soup

Reviewed: Mar. 23, 2009
I so love this soup recipe! I make it often and serve it with crusty buttered french rolls. I throw in a couple of hearty dashes of cayenne pepper to give it a little kick. Depending on what I have on hand, I sometimes use fresh veggies, sometime frozen. If I don't have macaroni, I will dice up a potato to replace it.

Rosemary Chicken with Orange-Maple Glaze

Reviewed: Mar. 20, 2009
I thought I would try this out because of all the great reviews, but honestly it just wasn't that great. It was edible, but the sauce was too weird tasting for me. It literally tasted like orange juice and maple syrup, which combined with chicken isn't appealing to me. We ate it, but I won't be making it again :(

Classic Bran Muffins

These muffins are yummy wonderful! I did make the following changes though. Used puréed pumpkin in place of the oil, 1/3 cup brown sugar and 1/3 cup of honey, 1 tsp. vanilla, 1/2 tsp. pumpkin pie spice. I made a praline topping of 1/4 c. each oatmeal, brown sugar, and chopped pecans mixed with 1 1/2 tbsp. melted butter.

Golden Rum Cake

Reviewed: Jul. 9, 2008
The actual 'cake' is amazing, and maybe I didn't read far enough into the reviews, but there should a fair warning that the glaze is not for everyone. All the reviews I read raved about the glaze, and it's my own fault for putting it on the cake, but as much as I love rum I found the glaze unbearable and the cake was wasted because I couldn't stand the glaze and neither could my family. I had actually had a small piece of the cake before I glazed it and it was outstanding. So this is just to let others know that the glaze might not be for you, taste it before you put it on the cake :)

Spiced Chicken Loaf

Reviewed: Jan. 28, 2008
I think this recipe has potential. I hesitated to follow the directions, but I did, just to see how it would come out. It wasn't 'bad', but I didn't want to eat it. I think it would taste SO much better without the ketchup and barbeque sauce. I'm going to try it one more time with some changes.

Beefaroni

I make a slight variation of this recipe for my family. I use 1 lb. ground turkey & 1/4 lb. ground turkey italian sausage. I cook the meat with a little chopped onion, garlic, pepper and italian seasonings. 1 jar of pizza sauce and 1 8 oz. can of Basil, Garlic, Oregano tomato sauce. I use Kraft Pizza Cheese (Mozarella & Cheddar). 3/4 of a package of elbow macaroni. No butter. I cut little stacks of pepperoni into quarters and mix it all together in a pan until the cheese is melted. I don't bake it because all the ingredients are already cooked, but you can.

These were really wonderful. I used the changes that Cherish recommended. I also divided/wrapped/froze the dough in 1/4's and had no problem rolling them out. Very yummy!

This is the same recipe I got from my Home Ec teacher in high school. I've been making these muffins for years and they are wonderful! For a different taste I use almond extract instead of vanilla.

Amish Yumazuti

Reviewed: Nov. 9, 2006
My entire family LOVES this dish. I used ground turkey instead of beef. I seasoned the meat with roasted garlic seasoning, garlic powder, onion powder, and black pepper. I also used 1 can cream of chicken and 1 can cream of mushroom and 1 can of Garlic and Onion seasoned diced tomatoes. I didn't layer it, just mixed it all together. Instead of just cheddar cheese I used Kraft Pizza Cheese (Cheddar and Mozzarella blend) and mixed a handful into the noodle mixture and then added more the to top. I only cooked it for 25 minutes. Thanks for the great recipe!

Wild Rice Harvest Casserole

This was a nice dish. I added some garlic powder to it and omitted the cashews. I only cooked it for an hour because the rice was done and I didn't see the need to put it back in for another 30-45 minutes.

These are absolutely excellent! I agree that you should whip the butter for awhile, like some else said, I just turned my mixer on and left it running for about 10-15 minutes. I also crushed up some toffee pieces and sprinkled them on top. Heavenly!

the blueberries tasted great, i used frozen and i cut the sugar to 1/2 cup. i used less cornstarch but since no one really said how much less to use i used 1 1/2 tbsp. and i think i should have used more. i will try it again and use 2 tbsp and see if it thickens up a bit more.

Apple Carrot Muffins

Reviewed: Apr. 10, 2005
These muffins are excellent. My whole family loves them so much that I have made them 3 times already this week. Instead of chopped apple, I grated one apple and added about 1/8 to 1/4 cup of applesauce to equal 3/4 cup. I also used regular milk and omitted the walnuts. I cooked them for 13 minutes at 400 degrees and they turned out perfect!
