Herbed Potato Soup

I modified this recipe just a little bit to suit my tastes a little better, but I'm sure that the original recipe would have been great as well! I used 8 small red potatoes since I didn't have medium ones on hand. I mashed half of the potatoes directly into the saucepan when they were done. The other half I tossed in at the end so we'd have potato pieces as well. I added about 1 tbsp apple cider vinegar and about 1/4 cup shredded cheddar chz as well. Garnished with red pepper flakes. Served with ham and cheddar sandwiche, which I toasted at 400 degrees on buttered Italian bread. It complimented the soup nicely! If you are going to do this, I suggest toasting the slices of bread on their own for about 3 minutes before adding the ham/cheese, and then for another 2-3 mins till browned. I will definitely serve this at our upcoming party- you can make a lot for very little money!

Cajun Chicken Pasta

Our favorite pasta recipe yet! We love spicy food and this is perfect. I always make my own cajun spice using about 8 different seasonings- it's always so good! Last time we saved the leftover sauce and put it in pitas the next day because we were out of noodles- simple and filling!

Chicken and Apple Curry

Very good dish! This was the first time I've cooked with curry and it will definitely be added to the rotation! I added some red pepper flakes and paprika for some extra flavor and a little bit of spice. I served it with rice. I put a chicken bullion cube in the water along with some cumin, brought it to a boil and then added white rice. Very tasty!

Asparagus Chicken Fajitas

These were okay, but I think they would have been even better in a pita shell! My husband thought that it would be good with the asparagus on the side rather than IN it. I added salsa and sour cream to mine and it made them so good!

Cream of Mushroom Soup I

This recipe was great! Just what we needed after a long rainy weekend. We did a few things differently- my husband suggested adding potatoes, which was a great idea because it made it a much more hearty soup. We used 4 potatoes, chopped, and added them when we put the mushrooms and onions in. We only pureed half of the veggies and set the other half aside to put back in later. We didn't have any sherry on hand so I used a little bit of cider vinegar, which I thought tasted good. After the changes I gave it 5 stars but my husband says 4.5...I told him that he would have liked it more if he put the cider vinegar in his bowl! (He didn't want any so we added it separately).

Blueberry Zucchini Bread

Very good recipe! I made muffins, here is what I did differently- I used 3 tsp. of baking powder, although less would have still been okay I think. I substituted half the oil with 2 mashed bananas (which I had in the freezer and just defrosted for 55 seconds.) I used a little more zucchini- about 2.5 cups. Baked for about 23 minutes. I made 18 large muffins and 12 mini muffins. At first I wasn't so sure about them, but once they cooled down they were great!!

Stuffed Green Pepper

I was really looking forward to these and they smelled so good when they were cooking...but they didn't taste all that great. I think they would have been better if the tomato sauce was stuffed inside along with the meat, and maybe omit the rice? I wish I could give this more stars, but they just weren't that flavorful.
