Mini Meatloaves

Quinoa Black Bean Burgers

I've been a vegetarian for 5+ years and am a huge fan of the Morningstar Farms black bean burgers so you can imagine my glee at finding and LOVING this recipe. It was amazing and so easy to boot. I followed the recipe as directed with the exception of green peppers for yellow. I cooked the burgers and then froze them in individual plastic bags for future use. When I'm hungry for one I grab it out - throw it in the microwave for about 1-2 min with a napkin over the top and throw it on some crisp iceberg lettuce and BBQ sauce. So good!

Pecan Pie V

Very good, however, I found that it was still runny in the middle after the proper cook time. Needed to keep it in the oven another 30-45 min to fully cook. Delicious though!

Easy Meatloaf

So-so. Wasn't the best and wasn't the worst. I made a separate BBQ sauce to go over the top. I might try to find a better recipe to make next time.

Ultimate Twice Baked Potatoes

Turned out a little "soupier" than I expected. Next time I'll use less sour cream and milk but overall was a delicious recipe and I'll use it again for sure!

Healing Cabbage Soup

Pretty good. I added cut up potatoe, carrots and celery to make it more of veggie soup. I also used vegetable bouillon instead of chicken bouillon to keep it vegetarian.

Cranberry Sweet Potato Bake

Loved it! Cooked this for Christmas dinner and got excellent reviews. I cooked my sweet potatoes as directed (some other just threw them in the baking dish) and I used fresh cranberries. Gorgeous colors!

Easy Broccoli Quiche

Really delicious. I did what some other reviews did and added about 4 strips of crumbled bacon to the veggie mixture. I also used only 3 eggs and baked a light layer of chedder onto the bottom of the crust and mixed one cup of sharp cheddar and 1 cup of pepper jack. My boyfriend who thinks that quiches aren't "food for men" asks for this all the time now!

Zucchini Herb Casserole

As a huge fan of all cheeses, I never thought I would think something was too cheesy. This dish was the first. I was hesitant about so little rice but it ended up being the perfect amount. Great dish for using those zucchini's that are in the fridge before they go bad just maybe use half the cheese.

Pollo Fajitas

Tofu Salad

Delicious! I made this as others had recommended and doubled the marinade so that my veggies would be really covered. As for the tofu, I pressed it with a plate and a bag of rice for 1 hour, then cut it into cubes and froze it overnight in a plastic bag. I thawed it this morning by soaking it in a bowl of hot water and then pan seared it before marinating- a lot more work but totally made the salad! I also did not cook my peas and julienned my carrots instead of shredding to give the salad more crunch. Turned out awesome and I will absolutely make this again!

Bacon Wrapped Water Chestnuts III

Very, very delicious. When I make mine, I cook the bacon first and then marinate the water chestnuts overnight. Then I wrap the marinated chestnuts in bacon and drizzle the remaining sauce over the top and cook for an additional 10 min. They turn out juicy, crispy, and really delicious.

Baked Ziti III

Really great! Does fill up 9x13 pan to the top, so plan accordingly. Also, I added the sauce over the bottom layer so the noodles would remain soft. Made if for guests coming over to watch a TV show and they loved it.
