Tasty Roasted Beets

White Chocolate Grapes

Great potluck dessert! Everyone loved them, once they figured out what they were...very different than chocolate covered strawberries, very refreshing! I used cashews instead of peanuts, and took them to 2 different events over the weekend, had none to bring home from either party. The kids especially loved them!

Zucchini Sausage Meatloaf

This is the best meatloaf I've ever made!! Left out the ranch dressing, and mixed ground turkey with Jimmy Dean sausage, don't know why but that's what I felt like. Fabulous!! Also added a dash of hot sauce to the topping, because we like it spicy. This one is going in the regular rotation for sure!! (BTW: Hubby had a little spaz over the zucchini, but it really didn't affect the flavor. You could see it still, if you are trying to be sneaky you might want to peel it first.)

Zucchini Ranch Meatloaf

Braised Pork Chops with Orange-Mustard Sauce

My husband is still raving about the sauce! I followed the recipe and the advice of the other reviews doubling the sauce. I served over wild rice with cauliflower. Very easy for a weeknight dinner! Going to try it over chicken breast too.

Balsamic Roasted Pork Loin

Works perfectly in the slow cooker also! I probably used more vinegar and oil than the recipe called for, and I cooked it on low for about 6 hours. Very tender and great flavor.

Roasted Vidalia Onions

We love this recipe! My husband uses a large walla walla sweet onion, with a flat bottom if you can find it. Core the onion (be careful not to cut through the bottom or all the juices run out), put in a spoonful of bouillon, press a clove of garlic, then fill it with butter. Wrap in foil, and cook on the BBQ for about 45 minutes. We eat them over a steak, and oh my heaven!!

Cornbread Sausage Casserole

My husband "mmmmed" through the whole meal--definitely a keeper! I used a can of diced chiles, hot jimmy dean sausage and only half of the mexican cheese, and it was fabulous! We used 2 boxes of jiffy corn mix, and cooked it in a round casserole pan, so it took better than a hour to bake. Next time I will use a 9x12 casserole pan. The sweetness of the corn mix was a good contrast to the spicy of the chiles and sausage. We are putting this one on the list to make again! A couple of fried eggs and it is a filling breakfast...
