Applesauce Oatmeal Cookies

I found this recipe looking for a somewhat healthy snack for my daughter to take to school to help her make it to her late lunch period. I wanted something that was satisfying but also with some nutritional value. I hate to buy prepackaged stuff like this because it's so hard to find a good one that doesn't break the bank. After reading some of the reviews and changes from others I added these changes as well and was very pleased with the results. If you are looking for a traditional sweet/treat oatmeal cookie this isn't the recipe for you. Here are the changes I made. I added 1/4 tsp. salt, 1/2 tsp. of vanilla extract, 1 heaping tablespoon of soaked flax seeds, and substituted 1/2 cup of white flour for whole wheat flour. I also baked them for 12 mins at 350. The next time I fix these (and I will, even my sugar crazed teen son liked them) I will add a few more nutrient rich ingredients like ground pecans,walnuts, or almonds to sneak into my kids. These types of recipes are good to hide healthy ingredients kids would normally turn their noses up to. Thanks for the recipe.

Lemon Zucchini Bread

This is a very simple recipe and can be altered easily. I use 2 cups of zucchini instead of 1.5, substitute whole wheat flour for the white, and use organic brown sugar. No matter which substitutions I have made, it always turns out great. Thanks for the recipe. I plan to keep this one.

Grilled Rib Eye Steaks

I love this marinade. It tastes just like teriyaki to me. I am also going to try it for chicken wings. We get together with our neighbors to grill on the weekends where everyone brings their own meat for the grill. I got a call earlier today to ask if I would stop by to pick up their ribeyes to marinate in my sauce that I use. thanks for the great recipe.

Joey's Bread Pudding

This recipe turned out good in spite of me having to substitute milk for half and half and soft wheat bread for white bread. I have never liked or wanted bread pudding until I recently traveled to Jamaica (where I received it accidentally for dessert my first night there.) Since then I have craved it but have been unable to find a recipe without raisins and such. This one is very close. I will make it again. I cut back a little on the sugar and I also made a rum sauce for my husband to use on the side. It was very good with and without the rum sauce. I am sure it will be even better when I use half and half the next time. Also, this recipe makes alot. Next time I will cut the recipe in half.

French Breakfast Muffins

I made a few changes to the recipe. I substituted 1/2 c of white flour for whole wheat flour. I also added 1/2 tablespoon of vanilla extract. I think the next time I make it I will add 1/2 c of applesauce. Overall it was good and easy. My 10 year old daughter did most of the work.
