Banana Praline Muffins

I loved these, especially for how easy they were to make. My kids historically aren't fans of nuts, but they didn't complain even once and had 2nds! I used 3 oz of plain yogurt and 1 oz of oil (instead of all oil). I used egg beaters (instead of an egg). And I used plain yogurt for the praline mix (instead of sour cream). These were small changes, but they made them slightly healthier.

Potato, Broccoli and Cheese Soup

I sauteed a bag of frozen brussels sprouts and pureed it along with the broccoli and potatoes. It still tasted like amazing broccoli soup! And extra veges, hidden and my kids loved it! I topped each bowl with a little cream and shredded cheddar.

Easy Cheese and Garlic Scones

This turned out good! I used 1 heaping cup of cheddar and minced 2 jalepenios in place of the garlic. I also upped the butter to 6 T. Wonderful!

Very Chocolate Ice Cream

Amazing. I substituted full-fat coconut milk (Royal Blossom brand) for the milk and cream. It's a great way to have a non-milk ice cream and is JUST as creamy. It is so good! And I love that it's not too sweet. I'm going to make a 2nd batch tomorrow. This is THE chocolate ice cream for me!

Coffeebar Chai

I love this recipe as a great start to a great chai. I don't boil the tea bags. They can burst and can make the chai bitter. The same goes with the vanilla. Boiled vanilla ruins the delicate vanilla taste and can lead to bitter undertones. So, I follow the advice of SKID27 and let it simmer with the lid on for about 30 minutes, then I add the tea bags and vanilla and (with the lid on) turn off the heat and let it all steep for a good long while. It's up to how strong you like your tea, but I steep mine for about 20-30 minutes more. I pour it all in a mason jar and store it in the fridge (I don't add the milk). Whenever I want chai, I add my favorite milk and enough chai mix to taste. I've made this LOTS and given it as gifts to friends in litle pint-sized mason jars. They have all said that it's the best chai they've ever had.

Black Bean and Corn Salad II

My hubby and I can't stop eating this...not sure there will be any left over for supper! Lol I probably added double the lime and about half the oil. I eyeballed everything and it was sooooo amazing!

Vegetarian Sandwich Spread

Good with Linkette's or Big Franks (both canned). And my favorite is using dill pickles vs. sweet. If you're a dill kind of person, don't use sweet in these, bottom line. Onions are good, but optional. Overall very good!

Kale Orange Banana Smoothie

This is good as is...OR you can really add whatever you would like. Add more fruit and/or yogurt and less water if you like your drink thicker. More water if you like it more of a juice consistency. Pineapple is an awesome addition, as is mango. These two fruits are amazing with oranges and bananas. Peaches...Just start throwing things in. And sub different greens for the kale, too!

Fluffy Pancakes

I make a huge sub...I use my own GF flour blend instead of wheat flour...but these still turn out WAY better than any other GF pancake I've ever used. Thanks for a great recipe that we can still eat gluten-free!

Mother's Applesauce Muffins

I made a few subs...used pearsauce and currents instead of applesauce and raisens. I added .5 t of nutmeg, too, since I used the pearsauce. Sooo good! Oh, I also halved the sugar and they were still plenty sweet.
