Zucchini Brownies

Holy cow were these good! I didn't use the nuts or the frosting, and they were not missed. I made two batches, and the second I used brown sugar/splenda blend, and I let the batter sit for an hour in the bowl, and the zucchini moistened the batter much better, and it was easier to spread into the pan. I took another reviewer's advice, and put my leftover grated zucchini in the freezer in two cup pouches, so I can whip these up whenever I want!

Spicy Beef Curry Stew for the Slow Cooker

Made this last night, great recipe! I added more ginger and curry, as we like our spices strong...added cayenne for some extra heat. Also coated the beef in flour before cooking and used sesame oil for good flavor. Cooked in the crockpot on low for 8 hours and served over brown jasmine rice. This ones a keeper, thanks for the recipe!

African Sweet Potato and Peanut Soup

Wow! I just made this exactly per the recipe, and it's amazing! I did add a little more salt....it tastes rich and decadent but it's a healthy soup...delicious!

Spicy Chicken Rice Soup

This was awesome! I doubled the batch, and used more pepper flakes for more zing, but other than that I stayed true to the recipe. Hubby & I loved it, and it will be a regular at our house. Thanks for posting :)

Easy Salsa Meatloaf

Fabulous! I used ground turkey, home made salsa, and 1 tsp mediterranean seasoning, and shaped into 6 mini loaves, and they came out perfect. Will make this again, thanks for the easy recipe!

Pumpkin Gingerbread

Very good! I used one cup white flour, and the rest in whole wheat, as it was all I had on hand. Made 10 mini loaves, and baked for 45 mins. Awesome - thanks for the post.

Chicken Breasts with Balsamic Vinegar and Garlic

This was good - next time I think I'll pound the chicken breast to make the cooking time faster, as my breasts were pretty big. The only thing I did differently was use cornstarch to thicken the sauce, as I was hungry and got tired of waiting & I omitted the flour. I served it with baked cauliflower with parmesan cheese for a low carb dinner. Hubby thought it tasted just like marasala. Will make again thanks for the recipe!

Slow Cooker Chicken Taco Soup

This was fantastic! I cheated a little - I used a quart of home made salsa in place of the tomatoes and chilis, used a bottle of pale ale, and used Bill Engols taco seasoning - it was fabulous! This will be added to our rotation - thanks for a wonderful and easy recipe!

Tantalizing Turkey and Blue Cheese Meatballs

This was great! I added extra jalapenos with the seeds, cut down the black pepper by half, and made into hamburger patties. They had a great flavor, with just the right amount of kick. I will definately make these again - thanks for the recipe!

Grilled Peanut Chicken

This was fantastic! I made it per the recipe, but added a little red wine vinegar and water to thin it out, and I marinaded chicken strips for around 2 hours, and threaded them on skewers, and baked for arounnd 10 mins, then finished in the broiler. Fabulous!

Blueberry Vodka Martinis

I make something similar to this using a wild berry schnapps instead of the raspberry liquor. Never thought of putting a splash of lime in though - must try that next time. Delish!

Pesto Turkey Burgers

These were the best burgers ever! I used Italian breadcrumbs, and omitted the salt & cooked them on the grill. I used home made pesto, and mixed a little with mayo for the bun, and the taste was out of this world. I can't wait to make them again - thanks for an awesome recipe!

Grilled Teriyaki Tuna

I didn't have teriyaki sauce, so I used Lawry's Hawaiian marinade mixed with soy sauce, I used a splash of olive oil, and I added the cayenne pepper, and fresh ginger & marinated for around 1 hour. I served it over mixed greens for a light healthy supper. The tuna was so moist & tender - I will definately be making this again. Thanks for the recipe!

Brown and Wild Rice Salad

This was a huge hit at my family picnic. I thought the raspberry vinegar would be too sweet, so I used store bought balsamic dressing instead. I also sprinkled on some blue cheese crumbles, which complemented the dish well. Fabulous recipe!

Chicken Tikka Masala

I have made this recipe many, many times, and I did not put nearly as much salt in as the recipe called for! I also used light cream instead of the heavy cream, and a little cornstarch to thicken the sauce if needed. This is one of mine and my husbands favorite recipes!!!
