Blueberry Muffins

This muffin recipe is great because it can be easily altered. I made the following changes due to allergies and to make it healthier: 100% whole wheat flour, 1/2 c agave instead of sugar, 1 tbsp flax/ 1/4 c water mixture instead of eggs, applesauce instead of oil. The muffin part was very good and even my young kids enjoyed it. However, 1 c of fresh blueberries was just too much for us. They became a mushy mess inside the muffins when baked. I spooned a lot of the mush out and had to do the same for my kids. It might be better with 1/2 c of blueberries or something else altogether. So, unless you LOVE lots of mushy blueberries, make this recipe (because it is good) and add the goodies of your choice.

Angel Cookies II

These are pretty good. I had no trouble mixing the dough, but I do not have a mixer and used my hands as if I were kneading pizza dough. Then I formed the dough into logs--like premade dough from the store--stuck in the fridge for 30 min and sliced. Do NOT cut thick slices! Tried that, threw them out. My one complaint is that they didn't seem "done" by the texture. Kinda odd, but they do taste good and are great for someone who is allergic to eggs and milk, like my son!

Slow Cooker Chicken and Dumplings

DELICIOUS! I made a few adjustments, but I believe it would have been great if followed exactly as written. I had a whole chicken I needed to cook, so I boiled it for 2 hours and used the thigh meat and 1 breast. I only used 1 can of bisquits and 1 can of chicken broth. As stated, despite what others have said, the dumplings did only take 25 minutes. Since my chicken was cooked, I used a BIg pot and cooked it right on my stove... took about 1 hour. YUMMY & Easy!

Chewy Peanut Butter Brownies

I'd give this a 5 star rating for flavor, the fact that it was quick and easy, and the ingrediants are easy to come by. However, Im not sure what happened with the baking. I baked these for a good 40 minutes, perhaps a touch longer, and they were pretty mushy. The next day, they were better, but still a little under-done in my opinion. I will try again and update rating if it goes better next time.

Raspberry Pie II

Pretty good pie! I used frozen raspberries, so I KNOW the flavor was not as good as it would have been had I used fresh berries... thats my fault! However, the filling thickened up nicely. I was surprised since the frozen berries were pretty watery. I did use 3 tbsp of cornstarch as suggested by another reviewer and let it sit for 2 hours after it came out of the oven. I also felt that I needed extra berries - again, maybe just because I used frozen instead of fresh and they aren't as plump. All in all, a very good recipe, very easy, good mixture of ingrediants. I will make it again, but I will use fresh next time! Thanks!

Whipped Cream

When I made this, it didn't fluff up very much, so I added a few tbsp sour cream and PERFECT! Very good. I probably made some sort of mistake, but the sour cream saved the day... so if yours falls flat, that's a good option for ya!

Easy Whipped Cream

Fantastic! Very creamy & delicious! Better than store bought. Mine turned out a little tangier than it should have, but that was my fault - only had fat free sour cream. However, it was light and fluffy, easy to make, and worked perfectly fine using 1/2 regular white sugar as well. Just add slowly and stir stir stir!

Banana Cream Pie I

YUMMY! The flavor of the filling is superb! MUCH better than pudding mix- by far! I did use 3 tbsp cornstarch instead of flour and did not bake, as suggested. You CANNOT beat the flavor of this! Perfection! Thanks for the great recipe - it's my husbands favorite pie!
